- 2 cups cassava flour be sure to use Anthony's Goods brand! This recipe will not work with tapioca flour!
- 1 cup coconut milk canned or boxed
- 1/2 cup olive oil
- 1/2 cup water
- 1-2 teaspoons sea salt to taste
- 2 teaspoons garlic granules
- fresh cracked pepper to taste- about 1-1 1/2 teaspoons
- olive oil for cooking
- Combine ingredients for the tortillas in a medium size bowl and mix together until well combined. The dough should stick together and be a smooth consistency.
- Divide the dough into 10 equal parts and shape into balls. On a piece of parchment paper roll and pat each section of dough into a thin tortilla. You can use your hands to press out the dough into a tortilla shape or use a rolling pin for this. If the dough is sticking sprinkle lightly with cassava flour.
- Heat a fry pan on the stove over medium/low heat. Drizzle the pan lightly with olive oil for cooking.
- Cook the tortillas for about 1-3 minutes in each side until it reaches desired consistency. You can make them crisp or soft. It's up to your personal preference!

- Cut the sweet potato into even medium size wedges or strips. Toss them on a sheet pan with the olive oil, tapioca flour, and seasonings.
- Spread the fries out evenly on the sheet pan. Bake on 425F for 20 minutes then rotate the fries and cook for another 20 minutes or until crisp.

- 1 cup cassava flour
- 1 cup arrowroot flour
- 1/4 cup maple syrup
- 1/4 cup palm oil shortening
- 4 medium eggs
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1 tablespoon ground cinnamon
- 1/2 cup raisins
- 1 medium egg beaten
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- In a KitchenAid mixer (or by hand), combine all of the ingredients for the dough (except the raisins and cinnamon).
- Once the dough is is smooth, gently incorporate the cinnamon and raisins.
- Separate the dough into 4 equal parts.
- Fill a large sauce pan with 2 quarts of water or half way full. Bring the water to a boil and then turn it slightly down, but keep the water boiling.
- Roll each segment of dough into a ball and then shape it into a bagel.
- Drop one bagel at a time into the boiling water and let them cook for 1 minute on each side or until they rise to the top of the water.
- Once the bagels have boiled, set them on the baking tray. If you so desire to put an egg wash on the bagels to make them brown- simply brush the egg wash on top of the bagels.
- Bake the bagels on 350F for 30-35 minutes until golden brown.

- 1 cup cassava flour

- Combine all of the dry ingredients in a KitchenAid stand mixer and blend until the flours are combined.
- Heat the oven to 110 degrees fahrenheit and then turn it off and keep the door closed.
- Add the ingredients for the yeast mixture into a small metal bowl and set it in the oven for 8 minutes until the mixture has risen and is bubbly.
- Add the wet ingredients to the dry ingredients and combine until the dough is thick and smooth.
- Remove the bowl of dough from the Kitchenaid and add the yeast mixture to the bowl. Using a rubber spatula, fold in the yeast mixture until the batter is well combined.
- Line a standard baking sheet with parchment paper.
- Pour about 2 teaspoons of the cassava flour designated for dusting onto the baking sheet and flour your hands. The dough will be very sticky, so flouring your hands and your work space is essential!
- Using a rubber spatula, scoop one fourth of the dough onto the baking sheet and roll it in the cassava flour. Form the dough into a round bread roll and repeat this process until all four bread rolls are on the baking sheet.
- Using a small paring knife, slice a small “X” on top of each bread roll.
- Let the dough rise for 50 minutes in a warm area. (Suggested: A low temp oven, about 110 degrees with the door cracked).
- After the dough has risen for 50 minutes, preheat the oven to 400 degrees fahrenheit.
- Cook the bread rolls on 400 degrees fahrenheit for 15-20 minutes until golden on top.
