Southwest Paleo Chicken And Fries

I can’t even. I can’t even begin to tell you how much I love this bowl. All my favorites. It makes me want to cry. Cry over food. Cry over how good food is. How good food makes me feel. Ahhh….
Okay, we were having a moment; I’m better now. But, seriously! Leftovers are illegal with this dish! I have never even seen them… and if there ever were any in the future, you can be sure that once my ears hear about it, there will be no more!
southwest bowl is going to change your world
This bowl goes down in history as that time my younger sister and I bonded over greens. Like, we made the whole recipe and ate it all ourselves. When this bowl was created, some kinda magic happened. It stopped both our worlds and we became completely engrossed in the four inches of greens, chicken, and fries in front of our faces!
The crispiest, most delicious spiced sweet potatoes, southwest chicken, addictive dipping sauce, and vibrant greens are all about to make your world a better place, today. 🙂
… And I’m about to share that all with you! I don’t know if it’s because, it’s pretty much all my favorite foods having a party in ONE BOWL. Or the fact that sweet potatoes paired with chicken, cilantro, and avocado makes my eyes turn into hearts. All I know is, that if I could eat one salad for the rest of my days- this would probably be it.
A few housekeeping notes about this bowl.
Pretty much EVERYTHING in this bowl can be adjusted for your personal dietary needs/tastebuds. Here are some of my favorite swap outs!
- Kale, spinach, lettuce, and pretty much anything green in place of cabbage.
- Yogurt for mayo.
- Basil, dill, or parsley for cilantro.
- Any other protein for chicken; steak, eggs, or fish to name a few.
- Regular potatoes for sweet potatoes (but only if you are crazy enough to love regulars more than beautiful orange sweet potatoes).
- Lime juice or vinegar for lemon juice.
- Any other kind of olives for kalamatas.
That is just how versatile and still amazing this salad can be!
Now go. Meal prep you heart out. Then kick up your slippered toes and plunge your giant serving fork straight into a super sized bowl of this southwestern favorite!

- 4 chicken tenderloins you can use fresh or frozen- just thaw it a bit before cooking frozen chicken.
- 2 teaspoons cumin powder
- 1 teaspoon dried onion flakes
- 1/4 teaspoon sea salt
- 1/4 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic granules
- 1 tablespoon avocado oil
- 2 medium sweet potatoes
- 2 tablespoons avocado oil
- 1 tablespoon arrowroot flour
- 1-2 tablespoons chili lime seasoning blend or cumin powder
- 1/2 teaspoon chili powder
- sea salt flakes to taste
- 4-6 cups chopped cabbage or other green
- 8 cherry tomatoes sliced in half
- 1 persian cucumber sliced
- 12 pitted kalamata olives or other olive
- 1 cup clover sprouts
- 1/2 large avocado pitted
- 1/4 cup paleo mayonnaise
- 1/4 cup fresh cilantro leaves
- 1/2 teaspoons cumin powder
- 1/4 teaspoon sea salt
- 1 small garlic clove
- 1 1/2 tablespoon lemon juice

- Preheat oven to 475F. Line a baking tray with parchment paper. Slice sweet potato fries into thin strips and toss in the oil, flour, and seasoning. Bake fries on 475F for about 30-45 minutes until crispy.
- Reduce oven to 350F. Toss chicken in oil and seasonings. Bake on 350F for 30 minutes.
- In a food processor or high powered blender combine all ingredients for the sauce until smooth.
- Assemble bowl by layering in greens, chicken, fries, sauce, and toppings. Enjoy!

So my family is on a paleo diet and we are always looking out for new recipes. My son, the math genius, couldn’t help to point out that if you cook the home made fries for 30-45 minutes and then cook chicken for 30 minutes, that’s at least an hour or more. An hour is 3 times as long as the 20 minute cook time you claim at the beginning for your recipe.
