Egg Sage Sausage Stuffed Acorn Squash

I’m such a fan of easy healthy recipes, it’s almost pathetic the way some of my meals look about mid-week… It’s a lovely combination of, I’m-too-busy-to-care and that-looks-like-it’s-been-in-the-fridge-for-a-month-I-should-probabaly-use-it.
I get away with murder behind the scenes, I’m tellin’ ya; today’s episode was a really (*not) attractive pile of cooked beets, arugula, and some canned tuna for lunch… like I said, there are no rules.
Anyway, that’s mid-week most days.
But sometimes, I actually want to eat for reals, so I make something incredibly easy but unbelievably delicious to remind me why I try sometimes.
And hence: the birth of this other-worldly-insanely-delicious combo of, super soft scrambled eggs that scream, “eat me I look cheesy, but am secretly daily free and good for you!”.
That with the combination of sizzling crispy Teton Waters Ranch grass fed beef sausages, some sautéed onion and sage.. we could stop there, but I think we can do better…
So, I decided to stuff it all stuffed in a roasted acorn squash that says, “Baby! Grab your spoon!” and some arugula; now we’ve arrived, it’s heaven.

The flavors are the perfect balance of fall coziness that makes you want to light cinnamon candles with every bite.
Sage, sausage, and squash just tip the scale into, I-want-this-every-day-of-the-week land.

You wanna know what I do with this super easy meal prep idea?
I make the squash ahead of time, then serve up the goodies inside when it’s time to eat.
Think of it like fast food, but waaaay better!
Trust me, it only takes like a few minutes to whip up!
The best part is, you can eat this meal for a tasty healthy breakfast, lunch, or dinner… you really can’t go wrong!
- 2 acorn winter squash
- 8 large eggs scrambled
- 4 sausage I use: Teton Grass Fed Beef Sausage
- 1/2 white onion chopped
- 1/4 cup sage fresh
- 2-4 cups arugula
- salt and pepper to taste
- avocado oil for cooking

Ingredients

- Preheat oven to 400F. Line a baking tray with parchment paper.
- Cut squash in half lengthwise, drizzle squash halves lightly with avocado oil, lay face down on baking tray, and bake on 400F for about 30 minutes until soft.
- While squash is baking, heat a skillet over medium heat on the stove. Dice onion and sage, then saute with about 1 tablespoon avocado oil. Stir on occasion until onions are golden, then remove and set aside.
- Cut sausages into bite size rounds and cook in the skillet with a bit of oil until golden and crisp on each side, then remove and set aside.
- Beat eggs together, then cook scrambled.
- Assemble by layering in a handful of arugula into each squash half, then sautéed onions and sage, sausage pieces, and eggs. Top with salt and pepper to taste and serve.
