Spicy ginger cashew chicken
This is the kinda meal that we all wanted to have a whole batch- just for ourselves, because it’s that GOOD.
Spicy cashew chicken is seriously everything!
It makes me feel like sitting on the floor, pretending like I’m eating take out,Β Gilmore Girl style.
I’ve never had take out, but I feel like I would reach a new status of cool with that brown box in my lap and chop sticks in hand.
But, since I’m basic, I had it in a bowl at the table with chopsticks instead.π
This meal is exciting enough on it’s own, but if you think you will still be hungry after this, then serving this dish with a pot of rice is always a good idea- that’s our dinner plans tonight. π

- 3 large chicken breasts cut in 1" cubes
- 1 tablespoon olive oil
- 1 head broccoli
- 1/2 large yellow onion
- 1 cup raw cashews
- 1 tablespoon black sesame seeds to taste
- 1/4 cup cilantro to taste
- 1/2 cup coconut aminos
- 1/4 cup chicken broth
- 1/4 cup soft medjool dates pitted, about 4
- 2 tablespoons tapioca flour
- 1 garlic clove
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon sea salt
- 1/4 teaspoon fresh cracked black pepper

- Cut chicken breasts into 1" cubes. Heat a skillet over medium heat on the stove and drizzle with 1 tablespoon olive oil. Cook chicken in skillet for about 5-8 minutes (stirring on occasion) until just cooked through- when a piece is cut in half, there won't be any pink left.
- Chop broccoli and onion into bite size pieces and transfer chicken to a plate. Add broccoli and onion into skillet and cook with a drizzle of olive oil until just soft, but not mushy.
- In a blender puree ingredients for sauce until completely smooth, then pour over chicken. Stir in cashews, sesame seeds, and cilantro and serve.

Also, Braggs amino acidβs are a great substitute for soy sauce and half the sodium. Taste just like soy sauce in my opinion. I was thinking of using that instead of the coconut aminoβs. The coconut aminoβs I found had sugar in them and were sweet. Anyway, just my thoughts on the matter. I havenβt made the recipe yet but I am really looking forward to it.
Yes, Braggs is good too, but I have found that it’s waaay too salty to sub 1:1 with coconut aminos…

Oh. My. God. This was so good. My wife and I are raving about it. The sauce is absolutely amazing. We used arrowroot flour instead of tapioca. I also toasted the cashews before adding them to the dish. I’m wondering what it would taste like if you substituted peanuts for the cashews? Hmmm…

Unfortunately the sauce was too thick and there was too much of it. Without thinking I dumped the entire contents onto my stir fry and it all clumped together into a gooey-mess. Next time Iβll be using much less thickener and much less sauce.
