I almost wish I wasn’t so in love with this cereal, because then I would stop eating it for breakfast (and even lunch). But until then, I guess you will have to listen to me go on about this hot cereal.
Sweet cinnamon spice and these lovely little dried apple bits from Bob’s Red Mill make a perfect toasty pair. These itty baby apple chunks are so sweet and have a wonderful light texture (Unfortunately, it makes you want to reach in a grab another handful to snack on!).
I had to indulge a little and make this recipe with thick and creamy full fat coconut milk. I just had to. But I guess you could make it with regular coconut milk (or almond milk). But I highly suggest not missing out on all those good healthy fats for your brain… Not to mention that scrumptiousness for your tummy! 😉
hearty, healthy, breakfast cereal!
A spoon of this thick and rich breakfast cereal was just what I needed this morning. The perfect sweetness from the apples and the creaminess from the coconut milk all sprinkled with cinnamon makes for a comforting way to start the morning.
Plus, it’s loaded with natural protein from the almond flour (28 grams!!!) and topped off with some lovely omega’s from the chia seeds. And don’t forget about that healthy fiber form the flax meal!
P.S. I LOVE cooking with flax! Just in case you were wondering 🙂
I used to wake up in the mornings to my Dad making his ritual breakfast cereal of choice. Some days it was grape nuts. Other days it was oatmeal or granola. And most days it was malt-o-meal. That breakfast cereal will always come bundled with childhood memories!
And now in present day, I don’t make much malt-o-meal (because of the wheat 🙂 ) but I do love a bowl of grain free hot cereal from time to time!
The wonderful things about this cereal is that it can be made ahead of time! Pre-prepared. Dry ingredients stored in a jar. Ready to be cooked up with coconut milk, vanilla, and date syrup. And spoiler alert: it only takes 1 minute to cook!
The natural sweetness from the apples is enough to be completely satisfied. But if you are looking for a little extra sweetness I suggest adding some homemade date syrup. Also, you really can’t go wrong with a little stevia, maple syrup, or honey.
I topped my bowl off with dried apple bits, fresh apple slices, a little extra cream from the coconut milk, and a dash of cinnamon! Go wild 🙂
*Disclaimer: the calorie count on this recipe is high due to the healthy fats in the full fat coconut milk I used. But if you use regular coconut or almond milk, the calorie count will be normal and WAY lower! No worries; either way, you can’t go wrong!
- 1/4 cup almond flour
- 3 tablespoons golden milled flax meal
- 1 tablespoon white chia seeds
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 cup coconut milk I love using full fat canned coconut milk!
- 1/2 teaspoon vanilla extract
- date syrup or stevia, maple syrup, or honey to taste
- 3 tablespoons dried apple bits
- fresh apple slices
- full fat coconut milk

- Heat the liquid ingredients in a small saucepan until the full fat coconut milk melts (make sure to mix up the canned coconut milk so that you get an even amount of thick and liquid milk).
- Add the dry ingredients to the liquid and cook over medium heat while stirring. Cook for about 1 minute.
- Serve and top with coconut milk, cinnamon, dried apple bits and/or fresh apple slices.

Hi Kylie- did the whole 30 back in May and lost 20 lbs. Still doing a Whole foods diet 95% of the time. Love this recipe- whipped it up this morning and added some fall flavors. I subbed out the coconut milk for almond milk and added some pumpkin to the mix as it was heating along with some pumpkin spices. I topped it off with fresh apple, pecans, toasted pumpkin seeds and a drizzle of agave nectar! Aaaamazing!! Thanks for having such a lovely blog to inspire healthy eating habits!

Can I sub coconut flour for ground flax meal.? Also on Whole 30, I use real vanilla bean when it calls for vanilla extract. The real bean is pure and no alcohol, also gives more flavor.

Hi Kristen, I am going to try this with my daughter. We love oatmeal, however we are now on a Paleo diet because my daughter is pre-diabetic (very scary stuff!). This recipe sounds so yummy, and a nice change from eggs and yogurt to get her day started.
Suggestion-please add to the end of the recipe “Eat immediately or it will turn into a mass of congealed goo” 🙂 I am sure this will be fantastic next time because I will eat it immediately after it’s ready. It smelled delicious!!!

recipe looks amazing! I ran the numbers through MyFitnessPal and calories and fat come in with a couple grams of what you estimate but I cannot get protein above 12 ground with this recipe. I did not include the apples as they are a topping but they are not high enough protein to boost it to where you have it.
This is a great recipe!! I’ve tried it twice now and am really happy with it. It actually fills me up!! Way better than cereal or oatmeal. I’m new to paleo and not strict abt it but just trying to eat more real food, more veggies, and less of the junk. Thanks so much for this!

I made this today subbing unsweetened vanilla macadamia nut milk and skipping the chia (I can’t handle the texture). Not bad! My macros were : 341 calories 35g fat 12g carbs 10g fiber and 11g protein. Makes this a pretty Keto friendly recipe. Hard to get enough flavor in though (I just used pyure sweetener and cinnamon and vanilla… may try cutting ingredients in half then adding chopped nuts and sugar free choc chips or blueberries!)

Hi Lori, yes- flax is alright to eat.
I’ve made this several times now. I love it. To lower the calorie count, I use unsweetened almond milk or 1/2 coconut milk mixed with 1/2 water. I also use 2 T of flaxseeds instead of 3 so it isn’t quite as thick and I use a packet of truvia as my sweetener.

I just made this today but can’t have almonds so I used half tigernut and half coconut flour (the kind that’s just like ground coconut flakes). My son loved it! Of course I did too but it was reminiscent of the Cream of Wheat he loved before going gluten free. I also added raisins (no sugar added). So yummy that I’m going to make the dry ingredients up in packets for those quick meals on busy days. Thanks so much for yum on my current egg-free journey!
