Today was a chipotle sweet potato popper sort of day…

I had the house to myself, so naturally, I started cooking.

I have been meaning to create a recipe like this for awhile now, so I finally got around to doing it and boy am I glad I did!

Instructions
  1. Preheat oven to 400F. Line a baking tray with parchment paper.
  2. In a bowl combine ingredients fully, then use a small/medium ice-cream scoop to form poppers and place them on a baking tray lined with parchment paper.
  3. Bake on 400F for 15 minutes, then turn poppers and cook for another 5 minutes until golden browned and fully cooked.

    Yummmmm, I just cooked a batch of these and I’m so happy with these tasty moist little balls (btw didn’t need any sauce) I didn’t have chipotle seasoning so subbed paprika, chilli and nutritional yeast….worked a treat! Thank you Kaylie :0)

    I’m a personal chef and I made these for a client’s kids. I used 1 egg instead of the tapioca flour and it all worked out well except for the sweet potato (which I grated in a food processor very finely) which I found did not soften enough in the 20 minute cooking time. I think I’ll try these again and sauté the sweet potato a bit before mixing it with the meat. Also want to try this with caramelized onions! Love this site for ideas for my paleo clients…and non paleo clients too!

    I made them with turkey and they turned out great! Is there any way you could tell me the nutritional information for when they’re made with turkey?
