The sun finally came out this week and I feel like a freakin new person!

I have been feeling like I’ve been living under a cloud and suffering from some serious vitamin D deficiency.

I spent the last couple of days on skies, with the family, and enjoying all the sun and chocolate protein balls!

All you need is a handful of ingredients you probably already have in your kitchen and you’re good to go!

Who else loves healthy recipes that are ready in minutes?

Because this killer chocolate + nut butter snack is perfect for me.

You can use any healthy protein powder in this recipe (I used Gainful Protein Powder).

I prefer to use a protein powder that has no dairy or grains; opting for something plant based and naturally sweetened.

Feel free to mix and match this recipe with different nut butters to make your own personal blend.

My favorites are peanut butter, cashew butter, and almond butter.

But if you are into tahini or pumpkin seed butter, feel free to go a little crazy… and let me know how it goes!

Instructions

  1. In a bowl mix together ingredients for the balls until smooth.
  2. Prepare the double boiler and melt chocolate chips and coconut oil together until the chocolate has just melted, then remove from heat and stir until all the chocolate has melted and is smooth.
  3. Scoop balls using a small ice-cream scoop and set on a baking tray lined with parchment paper. Chill balls in freezer until they solidify (optional). Then dip the balls in the chocolate and set back on the tray. Allow to set until chocolate has solidified before eating.
