Um, I might have just stuffed cauliflower into a banana bread muffin recipe. Is that even legal?
If not, it is now, because these muffins are insane, you guys!
So, SO good! And you WOULD NEVER KNOW they have cauliflower in them!!!
I even fed them to my Dad, who loved them and had no clue they had cauliflower in them- until I told him.
His response was: “I hate cauliflower, but I love those muffins!”.
I’ll take that as a win for team caulipower!

One of my favorite ways to store foods in the freezer is these awesome reusable storage bags.
- 3 medium/large bananas
- 1 cup raw cauliflower
- 3 large eggs
- 1 1/2 cups almond flour
- 1/2 cup almond butter
- 1/4 cup coconut sugar
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon sea salt
- 1/2 cup chocolate chips and some for sprinkling on top

Ingredients

- Preheat oven to 350F.
- In a blender combine all ingredients (except chocolate chips) until smooth. Pour batter 3/4 way up a muffin pan lined with paper liners. Sprinkle tops with more chocolate chips (optional).
- For six large bakery style muffins bake 350F for 45 mins. Cook less for twelve regular muffins.

Oh gosh, that’s ambitious Monika! π I always love a good experiment, but these won’t taste the same with ALL cauliflower and they will be a LOT more liquidy- I don’t know that it will turn out, but I’m curious! If you give it a go, I would try swapping for 3/4-1 cup cauliflower rice.

I would say it’s probably 1 1/2 cups.

I made these last night, I used oat flour because I was out of almond flour and didn’t realize until it was too late and I was out of chocolate chips so I just roughly chopped some dark chocolate from Trader Joes and then I sprinkled it with roughly chopped walnuts. My husband was skeptical when I told him there was cauliflower in it but he ate two for breakfast this morning so I guess he changed his mind… #SoDelicious

Can I use frozen cauliflower rice?

These look delicious! About to make them! Do you store leftovers in the fridge or are they good on the counter for a few days?
I store the leftovers all three ways- counter, fridge, freezer. π On the counter for the first day or two then in the fridge or freezer- depending on when I plan on eating them.
Is this nutrition for 6 muffins or 12? I see someone else had a similar question but the answer said one regular muffin, but that could mean small or large depending on who’s asking, can you please specify, thank you!

Hi I’m going to make these for myself to have for breakfast whilst I start placement on Monday! How many days will they last in the fridge?
Hi Natalie, I am not sure how many days they are good in the fridge for, I usually put them in the freezer after two days.
These came out delicious! I made some regular muffins as well as minis. I cooked the minis for 18 minutes and the regulars for 25 minutes. Rather than coconut sugar I used monkfruit. It tastes delicious and they are kid approved. Also, I only had blanched almond flour, and it worked fine. I’m planning to try some other flours next time since I’m trying to switch to more ethically grown flours. I will update with my results. One problem with the recipe, it doesn’t state to stir in the chocolate chips, but I figured it out.

I have made many gluten free, grain free muffins. These are by far the best. I didnβt have raw cauliflower or coconut sugar, but I had frozen cauliflower rice and honey and used those. Still great! This will be my go to recipe! Thank you!

I just tried this but with coconut flour. My βbatter β turned out really dry, more like a dough. Is that normal? Iβm new to paleo and alternative baking ingredients so I am not sure what is normal plus Iβm not great at baking to begin with, lol. Any tips?
Hi Megan, coconut flour absorbs a ton of water, so you it’s not a good sub unless you use 1:4 ratio. π That’s why it was really dry, next time use 1/4 the amount called for and it should be okay! The texture will still be different, but it won’t be as dry. π
