I can’t believe I only have November left to cook pumpkin things!!! Where has this month… fall gone??? I have been wrapped up in pumpkin spice, wool socks, fall walks, and dinners with friends, so much so, this month flew by me with barely a hello. Okay, well maybe I did see some beautiful maple leaves turn their golden color, my toes met the morning chill, and I did sip a couple goods cups of tea… Okay, I’m good.

It’s four a.m. and since the internet has been out up at the house for the last couple of months, I have been making daily trips to the office to suck up the internet over there. But that’s not always possible. Like when it’s 3am and you can’t sleep and all you want to do is post a few recipes. Is that really too much to ask?

I guess so, because here I am, bundled up head to toe, writing in Notes… until the later hours when I can connect and share this recipe with you guys! 🙂 ….. Instructions
  1. Use a hand immersion blender to blend all ingredients for the pudding until combined. Then chill in the fridge overnight and serve.
  2. Optional toppings (my favorite!): roasted squash or sweet potatos (bake on 450F with avocado oil for 20-30 minutes), nut butter, granola, cacao nibs, and almond milk. So yummy!
