Caramelized Banana Paleo Breakfast Cereal
Warm and toasty Paleo banana cereal. Made with caramelized bananas, chia seeds, golden flax, hemp, and coconut. This grain free cereal tastes like oatmeal and is topped with my favorite caramelized bananas! Paleo, gluten free, healthy.
I have a feeling you’re really going to like todays recipe; and when I say really like this, I mean, you may want to eat all four servings. I know I did and that’s why I put the extras in the freezer (supposedly a handy way to lock away extra food that tastes so good you want to eat it all). This bowl of grain free cereal and caramelized bananas is EVERYTHING!!!

So many of you guys have been asking how to make these caramelized bananas, so I’m happy to finally share today! Just so you know, it’s incredibly easy and pretty much full proof, in my opinion.
All I do is heat up my cast-iron skillet on the stove over medium heat. Then I add coconut oil, maple syrup, and bananas. Let them cook until golden on each side, sprinkle with a pinch of sea salt flakes and/or cinnamon, and you’re good to go!
This cereal has it all- flavaaaar, fiber, and protein thanks to Vital Proteins amazing collagen peptides (I love using their vanilla flavored collagen in this bowl, add so much flavor and is seriously top notch).
I’m always making chia seed pudding at home; usually going straight for the vanilla flavor, and then adding whatever fruit and toppings I want into it. But I wanted to see what would happen when I put a little heat to it. I cooked my breakfast cereal on the stove this time instead of making them overnight oats style. The results were flawless and breakfast worthy.
This warm chia cereal has all my trending favorites, chia seeds, coconut flakes, hemp hearts, collagen, and golden flax. A touch of maple syrup and almond milk and you’re good to go! Enjoooy!

- 4 cups almond milk or coconut milk
- 1 cup coconut shreds
- 1/2 cup almond flour
- 1/2 cup golden milled flax meal
- 1/2 cup hemp hearts
- 1/4 cup chia seeds
- 1/4 cup maple syrup optional
- 1/4 cup coconut flour
- 2 scoops collagen peptides Vital Proteins Vanilla Collagen
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla
- 1 teaspoon sea salt
- 4 small bananas cut into 1/2" rounds
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup

- In a skillet (I use cast iron) heat coconut oil and maples syrup. Slice bananas into 1/2"- 1" rounds, layer into pan, and cook on each side until golden. Then set aside.
- In a large sauce pan combine all ingredients for cereal and heat for 3-5 minutes until thick and creamy. Top with caramelized bananas, and any other toppings you prefer- I like cocoa nibs, nut butter, almond milk, and maple syrup.

Are you able to store this in the fridge and re-heat the next day (just minus the bananas?). Would love to have this but I know I’d be the only one in the house to eat it. LOL.

I have all ingredients at home except the collagen peptides and hemp hearts. Is there anything else I can use to substitute or would it severely alter the taste if I omit?
Hi Corinna, you can swap hemp hearts for coconut flakes and use protein powder in place of collagen. 🙂
This looks like it has some sort of syrup or sauce on top. Is that from the pan with the cartelized bananas?

Thank you for this recipe! I combined all the dry ingredients (seeds, flours, powders, etc) in a jar in the fridge and on the mornings I want this, I grab a few scoops then add the milk and syrup to make an individual helping. A good hot cereal for these cold mornings!
