5 Minute Fruit Tart With Creamy Banana Filling
This no bake fruit tart is filled with creamy banana filling with a secret ingredient: cauliflower! Don’t worry- you don’t taste it, it just tastes like fruity goodness, but it’s secretly good for you! Paleo, dairy free, and made in five minutes!
You know that feeling when you finish a slice of pie and want another, but pass because it feels like a rock of sugar and wheat just hit bottom?
Well, that doesn’t happen with this tart.
Which is why it’s dangerous to keep around…
I in loooove with the ingredients in this tart. The only ingredients are:
- Bananas
- Cauliflower
- Dates
- Walnuts
- Pineapple
- Berries!
Um, whaaaat? Are you for real?
I know that’s what you’re thinking, right?
Well, I’m 100% not kidding right now.
And that probably makes this the healthiest and easiest tart known to man.

I’m not saying I’m craving it again or anything, or the fact that it has cauliflower, protein, and fruit it- practically makes this dinner.
But hey, it’s up to you.
That creamy pudding filling is calling my name though.
This year, it’s all the fruit I can eat, all the no-bake tarts I can make, and all the wild cauliflower desserts I can manage.
I’m the creative type okay? Don’t diss the cauli in this until you try it- it will blow you’re mind.
And no, you don’t actually taste the cauliflower. It kinda acts like a third-man-buffer in the filling, keeping things light, healthy, and stretching the sugars a bit further so you can eat more tart!😁
If there were ever any rules in the kitchen- I would break them.
I never follow a recipe exactly and I’m always up for a good baking challenge!
I thought it was going to be a risk putting cauliflower in my desserts, but it turns out it was the best discovery since kale chips!

- 2 cups walnuts
- 12 large medjool dates pitted
- pinch of sea salt
- 6 medium frozen bananas
- 2 cups frozen cauliflower
- 1 1/2 cups frozen pineapple
- lemon juice from 1/2 lemon
- fresh berries
- full fat canned coconut milk
- honey for drizzling

- In a food processor pulse together ingredients for curst until the mixture sticks together in your fingers when you pinch it. Then press into the bottom of a 8" or 10" tart pan (I line the bottom of my pan with parchment paper for easy removal). If you have time, pop it in the freezer for as long as possible.
- In a high speed blender puree ingredients for filling until smooth then scoop over crust. Top with berries, a drizzle of coconut milk and honey. Note: if the filling starts to get runny, just pop it in the freezer for a few minutes!

Is there a trick to softening the dates before blending?
Hi Laurie, I usually always buy soft medjool dates. If you’re are hard, you can soften them by soaking in warm water until soft. 🙂 Hope that helps!

Hi Kaylie, thank you for all your amazing recipes. I was hoping to make the filling a bit more creamy since it seems like it needs to be either eaten either right away or after being frozen later. Do you think one could add tapioca powder or something that would emulsify the filling so it wouldn’t have to be frozen and would remain a creamy texture?
