- 1/4 cup coconut sugar
- 3/4 cup maple syrup
- 3/4 cup canned pumpkin
- 1 1/2 teaspoon pumpkin pie spice
- 1 1/2 can full fat coconut milk
- 1/2 teaspoon vanilla
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- coconut condensed milk
- maple pumpkin puree

- 1/2 can full fat coconut milk
- 1/4 cup coconut sugar
- 3/4 cup maple syrup
- 3/4 cup canned pumpkin
- 1 1/2 teaspoon pumpkin pie spice
- 1 1/2 can full fat coconut milk
- 1/2 teaspoon vanilla
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- coconut condensed milk
- maple pumpkin puree
- Combine ingredients in a small sauce pan and bring to a boil stirring occasionally. Once boiling turn down to a simmer for 25-30 min or until the mixture starts to thicken and coats the back of a spoon. Set aside in the fridge to cool.
- Mix all the ingredients in a small bowl until smooth and set aside.
- Put two cans of full fat coconut milk in the fridge overnight to completely chill the milk. Drain off any water and pour coconut milk into a bowl.
- Mix in the cooled coconut condensed milk, vanilla, cinnamon, and salt.
- Pour half of the coconut base into the ice cream maker. Add in the sweet pumpkin to the other half of the ice cream mix and pour into the ice cream maker.
- Let ice cream mix until thick. The timing will depend on your ice cream maker so check the instructions for best results.

- 2 cups walnuts

- In a food processor pulse together ingredients for curst until the mixture sticks together in your fingers when you pinch it. Then press into the bottom of a 8" or 10" tart pan (I line the bottom of my pan with parchment paper for easy removal). If you have time, pop it in the freezer for as long as possible.
- In a high speed blender puree ingredients for filling until smooth then scoop over crust. Top with berries, a drizzle of coconut milk and honey. Note: if the filling starts to get runny, just pop it in the freezer for a few minutes!

- 1/4 cup coconut shreds

- 1 teaspoon vanilla extract
- dash of salt
- 3/4 cup soaked cashews soak cashews in boiling water for 1/2-1 hour until soft, then drain
- 1/4 cup lemon juice
- 1/4 cup maple syrup
- 3 tablespoons coconut oil
- 1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
- 1/2 teaspoon Nielsen-Massey Pure Lemon Extract
- dash of sea salt
- dash of turmeric for color
- In a food processor blend all ingredients for the crust until it reaches a coarse consistency- if you pinch it, it should stick together in your fingers.
- Grease a mini muffin tin with coconut oil and press 1/2 tablespoon crust into the bottom.
- Puree soaked cashews in a food processor for about 1 minute. Then slowly pour in the maple syrup first and then the rest of the ingredients. Blend until completely smooth and pour 1 tablespoon filling into each serving. Chill in the freezer for 4-12 hours until firm- more or less time depending on the desired consistency.

Ingredients Ice-Cream- 3 small bananas
- 1 can full fat coconut milk
- 1/4 cup maple syrup
- 1 whole egg
- 2-3 teaspoons vanilla extract
- 4 small bananas
- 1/2 cup cherries fresh
- 1 cup whipped cream or whipped coconut cream
- 1/4 cup chocolate chips
- 1 teaspoon coconut oil
- Combine all of the ingredients for the ice-cream in a blender and blend until smooth
- Follow the instructions on your ice-cream machine and churn until the ice-cream is thick and smooth.
- To make the chocolate sauce, melt the chocolate chips and coconut oil together in a double boiler until the chocolate has melted. Stir the chocolate sauce until the coconut oil is well combined.
- Once the ice-cream has finished churning, serve with sliced banana, chocolate sauce, cherries, and whipped cream.

Ingredients Ice-Cream- 1 can full fat coconut milk I use Thai Kitchen brand
- 1/2 cup maple syrup
- 1 whole egg
- 1/2 teaspoon peppermint extract
- 1/2 cup chocolate chunks
- 1 whole avocado for coloring
- Combine all of the ingredients in a blender and blend until smooth (except the chocolate chunks, which you will stir in at the end).
- Remove the pit and peel from the avocado and blend into the ice-cream.
- Follow the instructions on your ice-cream machine and churn until the ice-cream is thick and smooth.
- Once the ice-cream is firm, remove the ice-cream from the machine and put in in a bowl or container. Stir the chocolate chunks into the ice-cream and serve or freeze for later use.
