These easy to make paleo tortillas are healthy, delicious, and easy for anyone to make!
Plus, who doesn’t love getting a little flour on their hands once in awhile?…

So, you can use a tortilla press for this recipe, but we love to do it by hand instead.
Rolling out dough by hand and shaping pretty tortillas is kinda therapeutic, trust me.
Every-time I roll out tortillas, it brings me back to when I was in Belize, where I spent the afternoons rolling out tortillas side-by-side with the neighbor family, who prepared meals for hungry kids every day after school.
Most of the time, it would be the children’s only meal in the day and it was such a joy to work side-by-side making tortillas for their happy little faces.

I use Anthony’s Goods cassava flour for this recipe and recommend you use the same brand for the same results.
It has been reported that different brands can cause a variance in final results.
Well, you’re pretty much ready to go!
Once you get your dough together and roll it out, you’re on your way to flipping tortillas.
Then comes the fun part: planning out what you want to fill them with!
Today, I made dessert tortillas by spreading some almond butter on one of these tortillas, adding some apple slices, drizzling with molasses, and finishing off with a sprinkle of cinnamon.
It was delicious!
Also, had to sneak in a breakfast burrito in there for lunch. π

- 2 cups sweet potato mashed
- 1 cup cassava flour
- 1/4 teaspoon sea salt optional

Ingredients

- Make mashed sweet potato (cut sweet potato into cubes, steam in a saucepan with 1" water until soft, then drain and use). Stir mashed sweet potato together with cassava flour in a bowl until smooth.
- Divide dough into 8 equal pieces, dust a clean surface with cassava flour, and press/roll out into 1/4" thick tortillas.
- Heat a skillet over medium heat, drizzle lightly with olive oil, and cook on each side until golden brown.

I tried this with tapioca and the wraps stuck to the pan, even with a generous amount of olive oil. When I pulled it out the pan I found the wraps were gummy and sticky

Can I use a different flour? I was food sensitivity tested recently and told not to use anything not on the test. I can use hazelnut or coconut flours. Would one of them work?
Hi Carol unfortunately, cassava is the only flour (except regular wheat flour) that can be used in this recipe to get the same results.
Hi Carol, I made tortillas with coconut flour and I added some almond and rice flour as well. So I will say yes you can-you will just need to experiment to find the perfect measurements. Using coconut flour is a little tricky because it really soaks up the liquid so you want to use less coconut flour. I recommend doing a little research into it so that you can enjoy your baked goods without any undesirable food sensitivity effects. π Happy baking! Thanks for sharing the recipe Kaylie!

Hi Mirna, I cook the potatoes until soft, then combine. You can add more flour if needed.
These were amazing!!!! The texture was the closest to gluten tortillas that I’ve ever had, and the flavor was DELICIOUS! I flattened them by putting the ball of dough between wax paper and pressing down with the bottom of the frying pan. Thanks for sharing the recipe!

Hi Jenny, I think you can use regular wheat flour in place of cassava- that is the only good sub I have heard of for cassava.

Best tortillas of all time. Iβve made some batches regular sweet potatoes and some with white sweet potatoes. All delicious. Iβve also been short half a cup of cassava flour once and used bobs red mills paleo flour and that worked well! For the people asking about a subsitute, Iβd give that a try. I just made/ate theses with a ground beef taco recipe. Thinking that these we’re going to be like tortillas for tacos or enchiladas, or burritos, they were actually very close to sopes. Absolutely brilliant! Depending on the size and thickness, this recipe can also make pancakes, or Indian roti or chapati. It’s was super easy to make, which makes me happy!

Hi Teresita, this recipe won’t work with tapioca flour unfortunately- it’s too gummy and they won’t turn out the same.
This simply is NOT working. I have used the exact measurements of sweet potato and cassava flour and I am left with a crumbly dry mix which can not be made into a tortilla. It seems like it needs either shortening or liquid of some kind. I was really looking forward to serving it tonight.

I made these tonight but used half coconut half arrowroot flour. I filled them with black beans and feta and topped them with pineapple peach salsa. Absolutely scrumptious!!
I have now tried making these three times. Very frustrating to make. Doesn’t matter how much flour I add to them they are too sticky to roll out. I have tried many flours, casava, almond, coconut, wheat and a combo of all of them. I would love to know what I’m doing wrong! In the end they are delicious but not worth the aggravation.

The sticky problem is probably from the difference in the sweet potato, not necessarily the cassava. My potato was a bit dry and I added a small amount of water to get a soft dough. Those that are too sticky might begin with less potato and add a bit at a time to get consistency. I loved mine!

First time I made them! Out camping so limited in ingredients, did have rice flour and oat flour. They turned out great, made some smaller ones as well going to use those to make a burger for my beetroot blackbean burgers in stead of bread.

Made these last week for the first time. I used about half coconut flour and half almond flour for the recipe (too lazy to run to the store for Cassava flour) and eyeballed for textures & consistency, then just a Gluten free flour blend for pressing them out. They came out great! I found that hand pressing them out worked best. My daughter and I ate them all week and they were perfect. Thanks for the recipe. About to make another batch π

Hi Jeanie, I don’t think it would work the same unless the rice flour was mixed with some tapioca flour or another flour that will help hold the ingredients together.

Hi Keara, I would say the sweet potatoes get cooked for about 8-10 minutes… depending on how high the stove is set. And the tortillas is about 1-2 minutes on each side.
My dough came out too sticky to roll out. I used wheat flour but some others who used cassava had the same problem. Really wanted this to work out. Oh well.
I make these regularly just as the recipe recommends, and they turn out great for me. I have celiac, so I was really glad to find a recipe for a wrap that stays flexible and tastes good with both savory and sweet fillings. I use parchment paper or a dusting of extra cassava flour to roll out, then bake on a griddle.

These were so good with carnita pork and cabbage. We made a sour cream lime sauce to go on them and the flavor combo was amazing. They do take a bit to cook though. They definitely took me longer than the 15 minutes. Totally worth it though. Thanks for the recipe!
Came out great on a baking stone in the toaster oven! I was short the amount of sweet potato so roughly halved the recipe, and added a splash of olive oil (maybe one tbsp?) to smooth out the dough before spreading directly on my baking stone. Turned out well and we’ll be baking these again–I’ve got sweet potatoes cooking now and will make your tortillas for breakfast. I seasoned the dough with turmeric, garlic granules, oregano, cumin, black pepper. It was delish!
Made these today as I was craving pizza. I caramelized some onions, ham steak and freshly sliced pineapple. The sweet potato and cassava crust/tortillas turned out amazing. I steamed the sweet potatoes as the instructions indicated and had no trouble making dough. I made balls and put them in-between parchment paper and flatten the dough using the bottom of a round cake pan. They made perfect rounds every time. Thank you for sharing this recipe. I am doing AIP and was running out of ideas. This will be great for shrimp tacos too.

Hi Vanessa, cassava flour dries out quite quickly, but you can reheat them in the oven or toaster to make them pliable again. π I like to store them in the freezer. π
Thanks for an easy amazing recipe!! As I live in France and get my cassava flour from the African/Asian shops, it is not the same as American brands. In most recipes I have to basically double the amount. With white sweet potatoes, a little less than double and with orange sweet potatoes, double the amount of cassava flour. Once I figured that out, perfection!!
These were delicious but didnβt make it to get filled with anything. Added mango jam and rolled em up and ate as is! Tried with melted vegan cheese which was not bad either. Great use for leftover sweet potatoes since I make a tray of them at a time and then tire of them after eating half.
