I was a bit anxious to serve these to guests at first, because I didn’t know what the response would be to no-bake brownies. I mean whoever heard of such a thing? So, I knew they either thought I was going to serve them raw brownie batter in a bowl and pass out spoons; or I was going to place before them something ultra healthy and odd, like cauliflower brownies or something (hmmm, I should think about that one).
Turns out I did neither and the feedback from my connoisseurs was more than acceptable and dissipated any nervousness at shaming the name of brownies with some brown sludge.
These no bakes are INCREDIBLY-mind-blowing easy!! Like, did I say- EASY! In 5 minutes they can be ready. That’s how easy, people. Everything gets blended in my favorite kitchen tool- the food processor and then it’s time to eat all the chocolate!
And… just when you didn’t think that brownies couldn’t get any healthier when they are already raw, no bake, paleo, sugar free, made with only a handful of real food ingredients, I tell you that they have marine collagen from Vital Proteins. And that practically makes them a complete meal (not really, please don’t count this as a your breakfast, lunch, or dinner for the next week… although you will want to!!).
You’re gonna fall in love with these no-bakes!
Don’t say I didn’t warn you when you bite into one of these and fall in love… It happens to the best of us- YOU’RE NOT ALONE. Your freezer will be your best friend or your worst enemy when it comes to these brownies. And your freezer will both safely hold these addicting treats for you for timely and convenient snacking casualties… But then again, they will also hold these addicting treats for you; outta site outta mind… Or are they?
I have found that most of the time, these no-bakes disappear too fast! Even when they are “safely hidden” in the depths of the freezer. If you see me head first, legs and bare feet dangling out of my oversized chest freezer, you’ll know what’s going down. No need to ask, just jump in and join me in the search for brownies! It will be well worth the shiver producing hunt.

Vegan Paleo Almond Butter Blondies
- 1 1/2 cup dates
- 3/4 cup raw cashews
- 3 tablespoons cocoa powder
- 2 tablespoons marine collagen peptides optional
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 2 tablespoons coconut oil

Frosting

- In a food processor blend all ingredients for the brownies until the cashews have been blended and color/texture is evenly smooth. Press dough into the bottom of a 6" by 3" baking pan lined with parchment paper (I use a small cake pan- you can also use a bread loaf).
- Then blend ingredients for the frosting in the food processor and spread on brownies. Chill in freezer or serve right away!

How long do you put them in the freezer? When i just store them in the fridge how many days can you keep them? Thx!
Hi Nathalie, I store them in the fridge for 4-5 days then pop them in the freezer for 1-3 months.
Can I use smooth almond butter instead of maple syrup (as i don’t really use maple syrup) ?:) thanks
Hi Barbora, I don’t think that would work very well… at least not if you want the same results. 🙂 They will be more dry and have no sweetness, yikes!
