Best Coconut Flour Brownies and Peanut Butter Frosting
The best healthy paleo coconut flour brownies topped with a smooth and creamy peanut butter frosting (almond butter for paleoers). An easy recipe that will kill the dessert round! Gluten free, paleo friendly, and ready to bake in 8 minutes!
I know, I just made a batch of fudgey paleo applesauce brownies. But what’s a girl supposed to do? When in the mood for some chocolatey baking, nothing stands in my way.
That smooth peanut butter frosting was my big motivation for making these brownies… I’m sure you can see why. 🙂 Also, to make these brownies 100% paleo, just switch the peanut butter out for almond butter!
It seems that the last chocolately treat was eaten from the freezer today, so it’s time to restock! My family loves to dig into the freezer after lunch and pull out a treat; brownies and paleo chocolate muffins are always hot commodities.
With that being said, you can easily freeze these babies and pull them out in your time of need. Nobody ever said no to brownies covered in peanut butter frosting.
This paleo brownie recipe is made with a little extra power boost! ready for the secret ingredient that makes these brownies practically dinner? I used collagen fuel from Primal Kitchen!
It’s loaded with 20g protein for just two scoops and is a paleo friendly protein powder. We use this collagen fuel in our house daily for smoothies and baked goods! It’s soooo good!
Since I’m a sucker for easy recipes, I whipped this one up in my food processor and had it ready in minutes (I’m sure you won’t disapprove of that). The only thing that requires a little extra care is melting the coconut oil before combining everything!
You can also mix everything by hand, but I just like to use my second set of hands (food processor). If you do make it by hand make sure you whip it really good, so there aren’t any coconut flour clumps.
no craziness. Just coconut flour… and…
When I served these up to my taste testers for the day; including a handful of friends and family, my brother reached for one, then hesitated and asked me if there was any “weird stuff’ in them… no avocado, sweet potato, zucchini, or black beans???
You better believe he covered all his bases! Hahaha, guess I have a reputation. But I promise these don’t taste like veggies (mostly because they don’t have any!). Also, they don’t taste like beef. The collagen fuel is chocolate or vanilla flavored. I used chocolate flavored collagen fuel since; well, brownies. But vanilla will work too!
So if you’re lookin for an afternoon pick-me-up, late night snack attack, or after dinner dessert, I got ya covered! These brownies are moist, cakey, and topped with smooth and creamy peanut butter goodness, also… they are technically healthy!
These brownies were served up on a beautiful handmade wooden cake stand by the lovely folks at Wood Expressions.
Reginald and Sheila have a lovely Etsy shop that is chocked full of beautiful artistry, handmade goods made from a variety of woods, and most importantly, beautiful cake stands that woo my heart! I have a few from their collection and I’m in love with them!
Enjoy!

Oh! These brownies look amazing!!
Thank you Bethany!
Wow, these look soo amazing! Sorry if this is a stupid question, but are the nutrition facts for the entire pan?
Thank you Hanna! Not a stupid question at all 🙂 It’s per brownie.
Can you substitutes eggs with flax or another egg substitute? Im have an egg allergy….
Hi Dolores, I am not 100% sure, I haven’t tried it, but I think it’s worth experimenting!
Looks delicious. Is it possible to leave out the Paleo protein powder? Will it alter the taste?
Yes, you can leave it out. 🙂 You can want to exchange it for 1 teaspoon coconut flour.
I’m new to Paleo and I don’t mean to sound rude. But how can these be “healthy” with 440 calories and all those carbs for just one? It looks amazing and I’d like a dozen, but it seems to defeat the intent of the Paleo diet even if it adheres to the rules as far as ingredients listed individually. Am I being too stringent?
Hi Sue, Paleo isn’t about counting calories- it’s about fueling your body with healthy whole foods and healthy fats to nourish your brain! The calories in this recipe are from coconut products and are burned as fat, fuel for your brain! Don’t count calories, count nutrition! 🙂 Hope that helps.
Coconut flour is much more “healthy” than a white, refined flour as well as coconut oil is much better than butter. I would eat this any day compared to a traditional brownie recipe.
Can you use low fat coconut milk?
Yup! 🙂
I don’t have Paleo Protein, can I substitute this with some other protein or any other ingredient?
Hi Marianna, you can either leave it out for sub for collagen or gelatin. 🙂
Oh my goodness! This is like the best paleo cake I’ve ever had! I made the frosting with half almond butter and half sunbutter. So good! Thanks for such a great recipe. Will make this for our next family gathering; guaranteed no one will even know it’s paleo!
Thank you Becky!
These brownies look sinful!! 🙂
Will this keep for traveling or does this need to be refrigerated? We are planning a camping trip and I always make fresh brownies for out camping trips and haven’t quite found one that doesn’t dry and fall apart. Thank you.
Hi Sherry, I haven’t tried to keep these around… because they don’t last that long, haha. But They should be totally fine for traveling!! 🙂 Have a great trip!
What would be a good substitute for palm oil shortening? Using palm oil products contributes to deforestation! These brownies sound yummy! Have a blessed day.
Hi Debra, you could try using coconut oil or butter! 🙂
Can I use an almond or other kind of milk? Struggling with daughters and coconut milk
Yes! You can use whatever milk you like. 🙂
I I made it today, its delish!
Good to hear Molly! 🙂
What are your thoughts on using coconut manna in place of PB or almond for the frosting?
Also, do you think they’d hold up well without the protein powder? Maybe sub flax for structure?
I might try another kind of nut butter in place of peanut butter- like almond of sunflower. And I think they would be totally fine without protein powder. A flax sub might be a good idea too.
Could I use butter instead of coconut oil?
Yes, that should work just great 🙂
These brownies are the best ones I have ever had. Amazing flufiness, taste, and the icing……..thank you so much for sharing ❤️
Oh this is what I love to hear! Glad you enjoyed them. 🙂
I eat the Keto diet how can I make this to eliminate a lot of the carbs man it does look good though thanks
I don’t think there would be a good way to change up the recipe. I would suggest searching for a Keto brownie recipe.
Are those calories per slice of brownies or the whole recipe?
Love all your recipes 😘
Hi Lisa, so glad you love the recipes! It’s per slice. 🙂
That’s a LOT of sugar for one brownie — 32 grams!!! According to the AHA, the recommended daily allowance of added sugar for a woman is 25 grams for the whole day and Paleo is supposed to be a low sugar/carb diet. When it comes to sugar these are definitely NOT healthy. What gives?
Kaylie, How many servings do you get per batch?
nevermind I just read the servings at the top of the recipe!
Is there a substitute for the palm shortening?
You can use butter. 🙂
Thank you for this recipe! These are so delicious! I recommend it to anyone, so worth making! : ) It’ll be my kids weekly treat 🙂
Thank you Lula!
These look great! Have you ever tried using maple syrup or honey? Would either of those work? What other modifications would be needed to use a liquid sweetener?
Hi Sara, I am not sure what the measurements would be- I’m thinking it would be too runny, but maybe it would work! Let me know if you try it. I would sub 1:1 ratio.
Is Palm Oil shortening the same consistency as crisco? I know Crisco isn’t healthy and probably not paleo but I already have some on hand.
That might work… I son’t cook with it so I don’t know, but I think it’s kinda the same.
I made these yesterday and they were so delicious! I made the frosting with almond butter, maple syrup and ghee. My ghee was room temp, so the texture of the frosting was thin, but I spread it over the cooled pan of brownies and put the pan in the fridge to set. It worked perfectly. Thanks for the great recipe, I just love your site!
Thank you so much Jenny!
Hi,
very tasty !!!
I made a mini cake with layers. one – peanut meat, the second – millet cream and the third layer with blackcurrant jam. They were all delighted 🙂
Thank You !!! :))))
