Whole30 Fried Cauliflower Rice

This bowl has to be heaven. Only 10 minutes to dish this baby up for your fam (or just you, which means: LEFTOVERS!!!). It’s a healthy way to use up those veggies in your crisper. Also, I was really surprised at how filling and satisfying this dish is; no hungry people here.

I had kinda slim pickings in the fridge today when I went to start breakfast, and I didn’t want to drive into town. So, this bowl is basically what I came up with between the garden and the fridge.

I’d say, I’m pretty happy with the way things turned out! Sometimes fridge scrambling demands creativity and results in something magnificent.

I had lots of people ask me where they could buy this when I showed a teaser of the recipe today. Unfortunately, you cannot pick this up at Trader Joes or Whole Foods, but you can make it at home! Although I really wish I could just walk into TJ’s and pick this up out of the freezer section.

However, you CAN buy pre-made cauliflower rice! Which saves even more time. If you want to make it at home though, simply use your food processor to mince it up really fine, like rice. Pure magic.

Pro tip: You can make this recipe ahead of time and freeze it. I would just chop up the veggies, make cauliflower rice, put it all in a storage container and freeze. Then when it’s time to eat just pull it out of the freezer, cook it up, add in eggs and top with sauce and green onions. Now that’s what I’m talking about.

Instructions

  1. Blend all ingredients for the sauce in a blender or by hand until smooth.
  2. Heat a fry pan over medium heat. Add cauliflower rice, chopped carrots, and onions. Fry in 2 tablespoons sesame oil for a few minutes until slightly soft. Then add the peas.
  3. Make a well in the middle of the fried rice and add the beaten eggs. Stir eggs until fully cooked. Stir in sauce and top off with green onions and sesame seeds.
