10 Minute cauliflower summer salad. Made with raw cauliflower, juicy tomatoes, and creamy avocado lime dressing. A refreshing paleo and whole30 lunch recipe for meal prep.
Hi friend!
Please let me introduce to you, the solo winner of summer salads this year: raw cauliflower summer salad.
It’s got all the good stuff: raw cauliflower, juicy tomatoes, and the single most popular heartbreaker dressing: cilantro lime avocado sauce!
Trust me, you need this sauce in your life.
This dressing is insanely creamy, light, and hits you with a zesty zing, pow and a pop!!
What does a girl have to do to get a spoon around here?

Anyway, now that we have established the fact that you should be double-hand-shoveling this sauce onto everything in sight, let’s talk about the meat and potatoes of this salad.
I’ve been doing this intermittent fasting thing, so I’ve really been focusing on packing those nutrients and a rainbow variety of raw foods into my meals.
I didn’t want a light and airy salad that would fly away with one gust of summer air.
No, this salad had to be layered with complexity of flavors and textures that keep my taste buds excited.
Hence: the minced cauliflower base and creamy avocado lime dressing.
You’re welcome.
Perfect for family cookouts, beach picnics, and packable lunches in these airtight glass containers, this salad checks off all the boxes for summer salad needs.
P.S. The leftovers are dope wth an extra squeeze of lime juice and some grilled chicken for extra protein and flavor.
Ahhh, seconds pluuuease.
