Thin Crust Chicken Pesto Paleo Pizza
Quick and easy paleo pizza with delicious Mediterranean toppings! Healthy low carb garlic herb crust topped with chicken breast, dairy free basil pesto, kalamata olives, mushrooms, and red onion. Mmmmm:) 100% gluten free and lip smacking good!
P.S. This pizza only takes 30 minutes in total to make- including cooking time! And the crust has no yeast and no almonds.
Today I woke up and wanted pizza. So, I made the crust. Then I realized that I hadnβt even thought about what I was going to put ON the crust. The cravings just come, ya know. I get all one-track-minded and forget all else!
Anyway, I dug around in the fridge and pulled out some cooked chicken. And then remembered I had some amazing dairy free pesto leftover! Pulled that out of the back of the fridge. And from there, I was pleasantly surprised at how well it all came together. Win!
So, yes⦠this pizza was a bit of a fling; the result of my instant impulse to cook my craving away. AND it worked!!!!
You had me at pesto pizza.
Thin crusted pizza is where it’s at! Just sayin. I mean, I love a good bready pizza too… or maybe I just LOVE pizza… or maybe it’s the fact that I only eat pizza a couple times a year, because I don’t eat grains. Well, in any case, pizza is bomb! And today I have made a pizza with all my favorite things!!! Funny it turned out that way; mad fridge scramble turned gourmet pizza. Happens all the time. NOT. π
The first time I ate pizza in the last eight months was at MOD Pizza. And it was the first time eating gluten free grains in four years!!! I was super sketched out at first, not knowing if my body would handle it- after being intolerant for many years.
So, after I gave it a go nothing happened. An hour later… nothing different. Huge relief! And major celebration!!! You better believe I ate that whole darn pizza that night. It took all night. And it was single serving. So I can’t really complain that much:)
But all that to say, pizza- I’m a fan. And I hope you love making this recipe. It literally took me no more than a few minutes (about 10) to whip up. So no worries about slaving over a hot stove all day. Most of your time will be spent eating it π

Will tapioca flour work in place of arrowroot in this recipe?
Yes, totally!
can you take the “buy here” of this so i can post to groups..x
Hi Heather, unfortunately, I cannot. Sorry!
Can you precook the crust and freeze? Or freeze the rolled out dough for make your own pizza nights?
Hmmm, I haven’t tried this before, but you could experiment with it! π Great idea!
Does the dough form a ball? I ended up with crumbly dry mix.
It should be a dough ball. If it’s not sticking together just add more liquid (oil and water. Probably 1-2 tablespoons).
What should the diameter of the crust be when I’m done rolling it out?
Hi Judy, I don’t remember the exact measurement, sorry!
Are those nutrition facts for one slice?
Yes, they are for one slice Jenny.
Hi Jenny, yes it’s per slice. π
Hi….you say put all ingredients in a bowl…does that include the olive oil, or do you reserve the olive oil for brushing….also can I cook the crust first before adding topping?
Hi Wendy, the 1/4 cup olive oil is for in the crust, then there is a little more for drizzling on top later on. π Hope that helps!
