We have the brownie element, with the chewy dense insides spilling over with pools of chocolate chips.
And that crisp outer edge that brings in our cookie element… we have to have that, right?
When my brother binges out of five massive hand sized doughnuts after soccer, I know I need to up my dessert game to keep that kid full.
If only we all had the metabolisms of a sixteen year old growing man, ugh… in my other life I eat five donuts for dinner too.

I can’t believe that I actually made a recipe without my food processor this week!
As you well know, I normally make all my recipes using this food processor.
Yes, I felt totally naked cooking without it, and I kept looking about trying to figure out what I was missing- seriously, it’s that much a part of my cooking.
- 1/2 cup tahini
- 1/2 cup coconut sugar
- 1/2 cup chocolate chips melted
- 1/2 cup almond flour
- 1 large egg
- 1/4 cup cocoa powder
- 1 tablespoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup chocolate chips or paleo chocolate bar

Ingredients

- Preheat oven to 375F. Line a baking tray with parchment paper.
- In a bowl whisk together coconut sugar, tahini, melted chocolate, and egg. Then stir in the rest of the ingredients (except chocolate chips) until smooth.
- Add chocolate chips and make 8 cookie dough balls, set them on the baking tray, pat down slightly and bake on 375F for 10-12 minutes. Then cool slightly before serving.

Agreed! Best cookie ever. What almost stopped me from a second batch was that I used all my tahini and cocoa powder. But then I tryed with cashewnut butter and more melted chocolate… PERFECT as well! hahaha But tahini was the big winner.
I used flax eggs instead of eggs and baked mine for 10 mins only. They are gooey and delicious.

What can you use in place of almond flour? These looks so good but of course I have a nut allergy!

LOVE this recipe!!!! Best cookies I’ve ever tasted! Gooey, chocolatey, crunchy outside fudgy inside. I would only say that 375F is too high because they spread out too thin and may burn on the bottom. I make them at 350F for 15 min and they’re perfect!

Any sub for the tahini (not a flavor fan) …. maybe sweet potatoe … what is the purpose of the tahini, just curious.
Hi Audrey, even my family members who hate tahini loved these cookies and when I told them there was tahini in them, they were shocked, so you might like it… 🙂 But if you really want to sub, then I suggest trying a really liquidy almond or sunflower seed butter.

Hi Kaylie! Saw this recipe on IG today & was inspired to double the recipe. Didn’t have tahini so substituted w almond butter. Skipped the melted chocolate & added extra cocoa powder. Used one egg and one flax egg. Threw in some walnuts. A quick & super easy whip up for tonight’s gooey treats! Thanks for the recipe despite my tweak…haha 🙂

Hi Ren, almond flour shouldn’t be swapped with coconut- it won’t work the same at all. You can use hazelnut flour in place of almond flour though!
