It holds that kind of magnitude. Butter lettuce is the golden hint that some yummy tacos are about to go down!

So, I planned on making this super-colorful grilled salmon with mango salsa this morning.
Then I pulled out the salmon that I had been thawing and it didn’t look like any relative of the salmon I know.
So I tossed in the nearest trash and went back to the drawing board.
Lucky for me, protein is protein.
I switched up the plan of attack; I set my sights on the ground beef in the back of my fridge.
Ways to make this ground beef as equally beautiful as the salmon raced through my mind.
Somewhere between… grilled sliders and taco skillet came the ultimate butter lettuce + mango salsa taco phenomenon.
No regrets over here.

Paleo Coconut Crusted Fish Tacos
- 1 pound ground beef
- 2 tablespoons chili lime seasoning blend Trader Joe's brand or taco seasoning and lime zest to taste
- salt and pepper to taste
- 1 mango diced
- 1/2 avocado diced
- 1/2 red bell pepper diced
- 1/2 cup cilantro chopped
- 1/4 red onion diced
- 1/2 jalapeño pepper minced
- lime juice from 1 lime
- salt and pepper to taste
- 1 large avocado pitted
- 3/4 cup fresh pineapple chunks
- 1/4 cup cilantro
- lime juice from 1 lime
- salt and pepper to taste
- 1 head butter lettuce
- 1 cup purple cabbage shredded
- 1 cup baby heirloom tomatoes sliced in half

- Brown ground beef with seasonings in a cast iron skillet, stirring on occasion until fully cooked (about 8-10 minutes until no red left in the meat).
- Chop and combine ingredients for salsa in a bowl.
- Blend ingredients for sauce in a food processor or blender to desired consistency.
- Prepare tacos by layering ground beef, salsa, shredded cabbage, tomatoes, and sauce into a lettuce leaf. Optional: Serve with a drizzle of full fat canned coconut milk, more cilantro, and lime wedges.

This looks delish. But I am wondering about the Trader Joe’s taco seasoning. Doesn’t that contain cane sugar? If so it wouldn’t be Whole 30. But I guess you could make your own seasoning.
