Now… I haven’t really been cooking that much for the blog lately, if you’ve noticed…
It’s been more like the free spirit, bare feet, throw-everything-my-heart-feels-like-in-and-see-how-it-turns-out cooking style lately.
Without making it instagram worthy pretty or taking pictures.
Just me enjoying real food without the pressure of making it perfect.
But, this one was too good not to share (I also have a feeling that those flourless pumpkin muffins and pumpkin pie smoothie was too good not to share, but we’ll save that for the later fall months, k?).

I absolutely LOVE cooking with dates!
Something about the wholesomeness gives me happy feelings in my tummy and I get pretty jazzed about the whole ordeal.
I’ve been having some serious cravings for extra protein and all the veg, so it’s back to the (not so) basics with this skillet dish.
I have many cast iron skillets in my kitchen, but this is my most recent fave.
I’m always reaching for it over my others, because first of all, it’s just so pretty!
My favorite feature is probably that I can touch the handle after it being on the stove- and not burn from the heat!
NO hot hands over here. 🙂
This Stargazer cast iron skillet is definitely a necessity for this dish, in my opinion. It makes cooking so much faster and enjoyable!
Sometimes, it’s necessary to take a step back and observe you’re life to see where there are needs and what needs a little extra healing or love.
For me, that looks like cutting back on hours, putting my phone, social, and email on hold and getting back to the basics of life to doing some soul searching. For reals. 🙂

Creamy Cauliflower Bacon Brussel Sprouts
Whole30 Thai Chicken Cauliflower Rice
Ingredients
- 1/3 cup dates pitted
- 2 garlic cloves
- 2 tablespoons red curry paste
- 1/2 cup chicken stock
- 1/2 cup coconut aminos
- 1/2 teaspoon paprika
- 1/2 teaspoon sea salt
- lime juice from 1 lime
- 2 large chicken breasts
- 16 oz cauliflower rice
- 8 oz broccoli rabe
Instructions
- Puree ingredients for sauce in a blender until smooth.
- Marinate chicken breast in 1/3 the sauce and put in the fridge for 30 minutes.
- Cook chicken on either a grill pan or skillet (I did both!). Place chicken on a well greased pan, cover with a lid, and cook for 5-6 minutes on each side until cooked through (there should be no pink on inside when cut open).
- Once the chicken is cooked, remove, and add broccoli to cast iron skillet and cook in leftover juices until it's soft, but not mushy.
- In the cast iron skillet, pour the rest of the sauce over the cauliflower rice and cook for about 10 minutes until soft (stirring on occasion to prevent sticking to the pan). Then serve with chicken and broccoli.
