Skinny Fruitless Sweet Potato Pie Smoothie
All I can say about this smoothie is that it’s the BEST smoothie I have ever had! And it just so happens to be packed with veggies, including cauliflower, it’s fruitless, and tastes like sweet potato pie! I make this every day; sometimes a couple times a day!
This sweet potato pie smoothie is hands down my favorite smoothie of ALL TIME!! And it just happens to be fruitless, packed with veggies, and yes- cauliflower. I am 100% in love, addicted to this thing, and have no reserves in raving about this combo of frozen veggies blended up. Because the flavors turn out BEAUTIFUL; tastes like pie, also ice-cream, also everything else delicious in the world. And the best part is… it’s THICK and creeemaay as heck! Dip your spoon into that. Sold.
Is it weird how much I love this combo? Eh, I think not. Don’t judge until you try it. It’s like a pumpkin pie smoothie bursting in your mouth, but with the collagen and veggies… it also, just happens to be dinner, or breakfast, or whenever you want to eat it.

I will warn you, this smoothie is a gooder and I have been known to eat it for breakfast, lunch, and dinner (all in the same day). So, if the same happens to you- don’t say I didn’t want you. 😉 I’m dead serious when I say this is my go-to, make every day, never gets old, love of my life, smoothie. I don’t even know what to say, it’s just my absolute FAVE. I hope ya love it too!
My mornings start out: I roll out of bed, crank the heat, stand shivering in the kitchen in my down parka, and read a bit while I sip my tea or water. Then I hit the yoga mat. AND THEN… it’s smoothie time (my favorite time of day 😉 ). In goes all the yummy things, I cover my ears for 1 1/2 minutes and tap my foot on the floor until my veggies magically turn into the best sweet potato pie I’ve ever had!
…Then I freeze even more and wait until lunch comes, so I can make this again.

Ahum… introducing, vanilla collage from Vital Proteins! what makes me love this collagen protein blend even more is the fact that this collagen blend taste SO GOOD, doesn’t have any sweetener, and it’s whole30 approved! I’m not being told to say this, I just really really love this stuff and from me to you- get this good stuff in your life! 🙂 You will love it! I use this blend in my smoothies every. single. day. A few notes on this recipe:
1. Don’t make it with raw cauliflower- it’s gross!
2. The reason I steam then freeze the vegetables is: easier digestion and better taste (tones down the veg flavor)!
3. Use a high powdered blender to get that thick ice-cream texture!

More like this:
- 1 cup sweet potato cubes steamed, then frozen.
- 1/2 cup cauliflower heads steamed, then frozen.
- 1/2 cup zucchini cubes steamed, then frozen.
- 1 scoop vanilla collagen powder Vital Proteins brand
- 2-3 tablespoons nut butter I love peanut butter or almond!
- 1-2 tablespoons maple syrup or honey or stevia to taste
- 1/2 teaspoon pumpkin pie spice I like to add a little more than 1/2 tsp, cause it's SO good!
- sprinkle of sea salt
- 1 1/4 cup almond milk or water. You can add more liquid to make it less thick.

Ingredients

- Make sure you have prepared your steamed then frozen vegetables. I just cut them into 1-2" chunks steam for 8-10 minutes until soft, but not mushy. Allow to cool in a strainer before freezing- freeze vegetables in a zipcloc, lay flat in the freezer.
- Blend all ingredients in a high powered blender for 1 1/2 minutes. You can add more or less liquid, depending on how thick you like it. Serve or top with your favorite nut butter and granola.

I don’t like cauliflower, even hidden in the cauliflower rice and a cauliflower pizza. Do you think I should leave the cauliflower out if I can taste it in other recipes? Thank you!!

Are carbs not a problem for you, Kaylie? Is it an individual thing? My doc has recommended 20-25 grams per meal and I miss out on so many of your good recipes because of carbs higher than I’m supposed to have. Yes, I could have half a portion but that would be crazy……

Hello. I would love to make this. However I am allergic to nuts. Any thoughts on how to maybe reinvent this recipe… the nut butters is what I have an issue with.
You could use sunbutter or omit the nut butter.
You could also use avocado in substitution of the nuts. You want to incorporate some fat into your veg smoothie in order for your body to properly use all those fat soluble vitamins.

Hi! I just made and ate the smoothie. I didn’t see that the amount is for 2 so I ate the whole thing; 2 tall glasses. It is AMAZING! I LOVE it!
