Paleo Coconut Flour Chocolate Cupcakes
Chocolate cupcakes are LIFE. Also, paleo chocolate cupcakes are even better. That mountain of fudgey frosting on top of that super moist, fluffy, best ever black out chocolate cupcakes… um, helloooo dessert!
I took some inspiration from one of my most popular paleo brownie recipes and evolved those babies into some double chocolate cupcakes worthy of sprinkles. Did you know you can get all natural sprinkles? Now, they aren’t paleo, but if you are looking for a healthier festive way to spice up your cupcake life, these are the natural sprinkles I always have in stock in my cupboards (also, here are the chocolate ones!!!).
Getting every last drop of cake batter and gooey fudgey frosting is ESSENTIAL, so I pulled out my favorite spatulas for the job- Di Oro’s black silicone spatulas. I cannot stress how important it is to find the right spatula for licking off the last drops of cake batter ;). Yup, I’m one of those. Paleo Diet + Chocolate Cupcakes
Chocolate cupcakes were one of the very first things I made once I turned onto the paleo diet. Never once have they let me down. Always rich. Always decadent and addicting. And always, always my favorite dessert ever.
My sister and I used to have midnight baking and movie marathons, loading our kitchen counters with way too many batches of mini chocolate and vanilla paleo cupcakes… and then of course there was the problematic situation of two teenage girls mixed with chocolate frosting overload, 90’s tv shows, flannel pj’s and bare feet. Partaaaay all night long!
So, if your chocolate dreams haven’t come true since going paleo- that’s ALL about to change. Be prepared to indulge in so much chocolate heaven you won’t know what to do with yourself! - 1/2 cup coconut flour
- 1/2 cup cocoa powder
- 1 cup coconut sugar
- 1/3 cup coconut oil melted
- 1/4 cup coconut milk
- 6 large eggs
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 1/2 cup chocolate chips or paleo chocolate
- 2/3 cup cashew butter or almond or peanut
- 1/4 cup coconut oil
- 2 teaspoons vanilla extract
- 1/4 teaspoon sea salt

- Preheat oven to 350F. Line a 12 cup muffin pan with paper liners.
- In a stand mixer or by hand combine all ingredients for cupcakes and mix until the batter is smooth.
- Use an ice-cream scoop to fill the muffin liners 2/3 way full. Bake on 350F for 25 minutes until cooked- test by inserting a clean toothpick or knife into the center of a cupcake, if it comes out clean they are done. Allow cupcakes to cool before frosting.
- Prepare a double boiler and bring heat to a low simmer. Melt all ingredients for the frosting together in the double boiler. Then beat with an electric mixer for about 1 minute (I use my KitchenAid). Transfer the bowl of frosting (it will be like a thick liquid) to the fridge to chill for about 1 hour until it thickens (stirring on occasion). Whip frosting again before piping onto cupcakes.

Hi Greta, I don’t know if that would work since maple syrup is a liquid and coconut sugar is not. Might be worth a try.

These look super yummy, I’m just wondering if they are very coconut tasting? My hubby doesn’t like coconut in everything, while I don’t mind it at all. But I would like to make something he’ll enjoy that’s healthier but still tastes indulgent and chocolatey.

Didn’t read nutritional data till after I went out and bought these expensive ingredients and mixed the cupcakes. I haven’t tasted them yet but I could have had real brownies or cupcakes and it would have been less carbs and less sugars. Very disappointing.

Whenever i melt coconut oil it solidifies in the batter then I end up with weird looking cupcakes
Hi Dianna, it might be prematurely cooking your eggs in the batter if you are really heating up the oil and then not mixing it into the batter right away. I would suggest heating coconut oil over low heat then mixing right away. 🙂 Best of luck!
What kind of chocolate chips do you use? Semi-sweet? Because there is no sweetener in the frosting? Not unsweetened is guess.

Hi Marisa, I don’t know how well that would turn out- they have much different baking consistencies. Maybe cassava flour?? I haven’t tried.

Hi Anna, it will probably turn out gummy if you do, but you can always experiment. I haven’t personally tried it.

Okay, I usually don’t do recipe comments, but being paleo and needing dessert recipes is hard!! So here’s my take! I made these for my daughters birthday party, and I added 1/4 cup of semisweet chocolate chunks to the batter, and I forgot to add the coconut milk to the recipe because I suck. They still turned out so wonderfully that my VERY non-paleo cousin and my daughter both asked for another one! They are so moist and perfect!!! I wouldn’t have known they weren’t traditional cupcakes. I served them with a coconut frosting that I found a recipe for, and thy tasted like German chocolate cupcakes. BE STILL MY HEART. But seriously, these will forever be the cupcakes I make from this point forward. I ate one today, and even being day old, they were fantastic!!

I’m so excited to try this recipe! I have had the worst chocolate cravings for the past 3 days! I just ordered a kitchen-aid stand mixer, so only a couple more days of waiting! I wanted to ask your opinion on subbing the coconut oil for clarified butter? Only because the last time I baked with coconut flour, coconut milk and coconut oil, the coconut flavor was so overpowering, although not sure that would be the case in this recipe? I got 189 calories per cupcake? With no frosting, anyone else try to figure that out?

Great recipe. I used 1/2 the amount of coconut flour, 1/4 cup and baked a few minutes less. I just go by how much the flour soaks up, adding a little and waiting to see the texture. Used sweeteners and lily’s stevia chocolate chips.

I used boxed coconut milk in this recipe, but either will work.
25 minutes is waaaay too long. I took them out at 22 and they were already a bit overcooked. If I’d left them in the entire time, they would have tasted burnt. Not a great recipe. The taste is pretty good, but the texture is kind of spongey.
Since going gluten free, I have been trying recipes and this one is AMAZING!!! Also, should they be refrigerated once baked and iced?

I am actually VERY NEW to paleo and I made these today. I would NEVER have known they were paleo! My son’s birthday is this weekend and I wanted to have something sweet for myself so I wasn’t staring at the cupcakes drooling. I will be making these over and over!!!
