Well, it’s time for that dream to come true! This tasty stack of pancakes takes only three minutes to whip up. Then it’s on the griddle to cook for one minute on each side. Talk about easy! If it were any easier, I’d have to call it fast food.
Don’t get me wrong- I am in love with cooking. But somehow, in the middle of the summer heat and the busy days it’s hard to find time to cook. And if it weren’t for the lack of time, it would be for the lack of cooler temperatures.
Not kidding when I tell you, I got up two hours earlier this morning to make breakfast, because I wanted to have enough time to cool the house down before this log cain turned into a sauna and we all baked.
This week, we have been pulling 90+ degree temperatures here in the mountains of Washington. Early in the morning, we close down the windows (sad face) and pull the curtains to keep the heat out. So naturally, cooking is out of the question anytime after nine a.m. Go ahead, laugh. I feel like the snow just melted and I haven’t had time to get warmed up yet.

Pancakes From Plantains
