Don’t get me wrong- I am in love with cooking. But somehow, in the middle of the summer heat and the busy days it’s hard to find time to cook. And if it weren’t for the lack of time, it would be for the lack of cooler temperatures.

This week, we have been pulling 90+ degree temperatures. Early in the morning, we close down the windows (sad face) and pull the curtains to keep the heat out. So naturally, cooking is out of the question anytime after nine a.m. Go ahead, laugh. I feel like the snow just melted and I haven’t had time to get warmed up yet.

Instructions
  1. Combine all of the ingredients in a food processor or high powered blender and blend until smooth.
  2. Heat a fry pan over medium heat (you can also use an electric pancake griddle).
  3. Pour 1/4 cup of batter for each pancake onto the griddle and cook for 1 minute on each side until cooked through and golden brown.
