And they are SO SO good with crispy edges and truck loads of flavor.

I’m talking better than Eggo or regular waffle good.

Because, they are super quick and easy to make; literally, all you have to do is prep these and toss them in the freezer and you have breakfast all week long. 🙂

I love cooking with fresh ingredients and usually I like making something with vegetables when I first wake up.

This recipe is so rad, because I can jump out of bed and have waffles and still feel good about the ingredients I am putting in my body.

Now, you can feel free to top these waffles with any of your favorites, but this morning I was feeling the salad vibes.

I got my tahini drizzle going and loaded up the sides with arugula, blueberries, and chia seeds.

It was unexpectedly fresh, delicious, and comes highly recommended!

I was so stoked when the mail came yesterday, because I have been waiting to get my hands on this mini waffle iron that is just so so cute and pumps out the prettiest waffles ever.

Like ever.

A friend on social media had shared some waffles and I just had to buy myself one of those cute $10 waffle irons.

It’s pocket size, dorm room size, and all around perfect.

  1. In a bowl whisk together grated sweet potato, eggs, and salt (optional).
  2. Heat waffle iron, then drizzle with olive oil to keep waffles from sticking. See recipe notes for the waffle iron I use. Cook waffles until golden and crispy (about 5 minutes or more) then serve with your favorite toppings- savory or sweet!
