Um, I might have just stuffed cauliflower into a banana bread muffin recipe. Is that even legal?

So, SO good! And you WOULD NEVER KNOW they have cauliflower in them!!!

I even fed them to my Dad, who loved them and had no clue they had cauliflower in them- until I told him.

His response was: “I hate cauliflower, but I love those muffins!”.

I’ll take that as a win for team caulipower!

Cook Time 45 minutes

Ingredients

Instructions

  1. Preheat oven to 350F.
  2. In a blender combine all ingredients (except chocolate chips) until smooth. Pour batter 3/4 way up a muffin pan lined with paper liners. Sprinkle tops with more chocolate chips (optional).
  3. For six large bakery style muffins bake 350F for 45 mins. Cook less for twelve regular muffins.
