My meal prep golden nugget is this:

Bake a batch of sweet potatoes the night before; you know, when you are just chilling watching Netflix or the latest episode of British Baking Show.

Then in the morning, chop up the sweet potatoes, throw some fruitiness in there, and douse it all with almond milk.

Ah-mazing. Two thumbs up!

Personally, I bake my sweet potatoes in my convection toaster oven, because they cook faster and get all soft on the inside and the caramely sugars oozing out.

My favorite storage ideas for this cereal: the fridge in these glass lock containers.

There literally isn’t an easier breakfast for before you head off to work or the gym.

  1. Cut baked sweet potato into bite size cubes. Add all ingredients into a bowl and serve like cereal.

How to make baked sweet potatoes: poke sweet potatoes with knife in various spots, then place on oven racks. Bake on 400F until soft (about 50 minutes).
