It’s been a (not quite) festive week around here. I headed down south a few states this week to visit family and let’s just say it’s a bit warmer than the icicles hanging off the roof at home. 🙂 Palm trees, sunshine, long sunny walks, and of course… Christmas cookies- because it is December after all (how the heck did that happen already!??).
I’ll be the first to admit that my family wasn’t always to most celebratory when the holidays rolled around. My childhood memories of the holidays revolve around rushing to and fro, over snowy mountain passes to make it in time to all the Christmas parties, cramming in 2-3 holiday bashes in one day, and then racing home for a quite family ski day in our log cabin in the woods… Okay, so it was pretty great, maybe we did celebrate just a little. 🙂
And all those pop corn picnic style Christmas dinners were more than just, not too bad- they were awesome!! To a kid, sitting on a red checkered tablecloth in the center of the living room surrounded by sparkling tree lights, family, and plenty of My moms beloved caramel pop corn, nutritional yeast pop carn, and sea salted pop corn, it’s pretty much the best! Can’t go wrong on Christmas night with all of that!
Looking back at all of our traditions… ya know, being jarred awake by my two younger siblings, opening healthy stuffed stockings- complete with granola bars, Trader Joe’s salmon jerky, xylitol candies, and a penny (in true little house on the prairie fashion). The Christmas story read by dad, the snowy search for ceramic baby Jesus wrapped up in his ceramic swaddling cloths (the first one to find him gets the esteemed honor of placing him in the manger scene), and the rest of the day, consisting of family ski trips, Christmas cookies, and my favorite- the picnic dinner!

Cookies. Sweet, spiced up, cute fashionable gingerbread men, pretty sparkling snowflakes, and Christmas stockings. This year we are doing Christmas cookies up paleo style! I hope you love these super easy to make holiday cookies- I made them in the food processor! My family and I had a blast baking cookies while the hallmark Christmas channel streamed in the background. Yes, that’s what you get when all the guys go out to walk the dogs and all the girls are left to decorate!
I have to tell you, this recipe would be perfect for gingerbread houses! If any of you make them, let me know, because I can’t wait to see your creations! I have long been obsessed with gingerbread houses, ever since my Grandparents took me on the annual tour of the gingerbread house competition- and let me tell you, those gingerbread house skyscrapers, cottages, and Victorian mansions were pretty rad to admire when you’re a six year old girl in love with doll houses.
