I have a feeling you’re really going to like todays recipe; and when I say really like this, I mean, you may want to eat all four servings. I know I did and that’s why I put the extras in the freezer (supposedly a handy way to lock away extra food that tastes so good you want to eat it all). This bowl of grain free cereal and caramelized bananas is EVERYTHING!!!

So many of you guys have been asking how to make these caramelized bananas, so I’m happy to finally share today! Just so you know, it’s incredibly easy and pretty much full proof, in my opinion.
All I do is heat up my cast-iron skillet on the stove over medium heat. Then I add coconut oil, maple syrup, and bananas. Let them cook until golden on each side, sprinkle with a pinch of sea salt flakes and/or cinnamon, and you’re good to go!
This cereal has it all- flavaaaar, fiber, and protein thanks to Vital Proteins amazing collagen peptides (I love using their vanilla flavored collagen in this bowl, add so much flavor and is seriously top notch).
I’m always making chia seed pudding at home; usually going straight for the vanilla flavor, and then adding whatever fruit and toppings I want into it. But I wanted to see what would happen when I put a little heat to it. I cooked my breakfast cereal on the stove this time instead of making them overnight oats style. The results were flawless and breakfast worthy.
This warm chia cereal has all my trending favorites, chia seeds, coconut flakes, hemp hearts, collagen, and golden flax. A touch of maple syrup and almond milk and you’re good to go! Enjoooy!

Caramelized Banana Grain Free Breakfast Cereal
Ingredients
- 4 cups almond milk or coconut milk
- 1 cup coconut shreds
- 1/2 cup almond flour
- 1/2 cup golden milled flax meal
- 1/2 cup hemp hearts
- 1/4 cup chia seeds
- 1/4 cup maple syrup optional
- 1/4 cup coconut flour
- 2 scoops collagen peptides Vital Proteins Vanilla Collagen
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla
- 1 teaspoon sea salt
- 4 small bananas cut into 1/2" rounds
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup
Instructions
- In a skillet (I use cast iron) heat coconut oil and maples syrup. Slice bananas into 1/2"- 1" rounds, layer into pan, and cook on each side until golden. Then set aside.
- In a large sauce pan combine all ingredients for cereal and heat for 3-5 minutes until thick and creamy. Top with caramelized bananas, and any other toppings you prefer- I like cocoa nibs, nut butter, almond milk, and maple syrup.
