Coconut Yogurt Pumpkin Chia Cereal
Thick and creamy coconut yogurt pumpkin chia breakfast cereal. Easy paleo breakfast idea! A bowl full of creamy pumpkin spice pudding, topped with roasted sweet potatoes and nut butter!
This bowl is my new pumpkin obsession. You will know why once you take a bite of this creamy dream come true… it’s ridiculously good. That thick spoonful of creamy goodness is going to leave you drooling. I don’t know what it is about pumpkin, but I have had to double up on the amount of blog posts I am publishing weekly, just to squeeze in my love affair with pumpkin, and the boatload of recipes that follow as a direct result of my obsession. You have been warned.
Everything about this recipe is easy and delicious. From the cream filled coconut yogurt, to the smooth puree of pumpkin mingling with spices, and the roasted sweet potatoes and nut butter to top it off. Grab your spoons people and dig in! You can eat this yummy breakfast right away or wait until it thickens into this pudding like texture. Either way, you’re in for a treat!

I can’t believe I only have November left to cook pumpkin things!!! Where has this month… fall gone??? I have been wrapped up in pumpkin spice, wool socks, fall walks, and dinners with friends, so much so, this month flew by me with barely a hello. Okay, well maybe I did see some beautiful maple leaves turn their golden color, my toes met the morning chill, and I did sip a couple goods cups of tea… Okay, I’m good.
It’s four a.m. and since the internet has been out up at the house for the last couple of months, I have been making daily trips to the office to suck up the internet over there. But that’s not always possible. Like when it’s 3am and you can’t sleep and all you want to do is post a few recipes. Is that really too much to ask?
I guess so, because here I am, bundled up head to toe, writing in Notes… until the later hours when I can connect and share this recipe with you guys! 🙂 ….. I mean, I guess I could walk to the office, but I don’t want to walk through the woods in my pjs and freeze my tush off sitting in a cold room all morning. So, talk soon!

- 1 cup coconut yogurt Coyo brand is best!
- 1/2 cup pumpkin puree
- 1/4 cup chia seeds
- 2-3 tablespoons date syrup or other sweetener
- 2 tablespoons collagen peptides or other protein powder
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice

Ingredients

- Use a hand immersion blender to blend all ingredients for the pudding until combined. Then chill in the fridge overnight and serve.
- Optional toppings (my favorite!): roasted squash or sweet potatos (bake on 450F with avocado oil for 20-30 minutes), nut butter, granola, cacao nibs, and almond milk. So yummy!
