Easy whole30 avocado tuna boats are filled with a creamy tuna (or salmon) filling and topped with fresh herbs. A delicious, healthy, and easy way to do lunch whole30 and paleo style! Ready in only 5 minutes.

These avo tuna boats are so satisfying and delish! And a little bit of fresh thyme on top just gives it that extra kick of flavor! I made and photographed this recipe in just a few minutes. Literally was one of the easiest things I have ever made.

And it’s chocked full of protein and brain food to keep you going throughout the day!

Wether it’s lunch on the go or just a lazy day, these whole30 tuna boats can easily be prepped ahead of time and served up whenever you’re hungry!

behind the scenes eating: avocado chicken galore!

It’s so funny how everyone comments on all the yummy things I get to eat (which yes, I do eat a lot of homemade dishes), but what they don’t see is my everyday norm.

But the fact that will I eat chicken and avo salads for every meal five days in a row never really makes it’s way to the big screens. Because I guess that would be pretty boring… A blog made up of only chicken avo salads; BORING!

Times when I’m not making recipes for the blog, it’s just plain old easy cooking. I throw my veggies in a bowl, top it with some baked chicken, and dressing. Baked chicken breast from Trader Joe’s is my staple protein then I add in all my veggies in around it. Busy life = easy eating. So, to mix it up I’ve been prepping these pretty little avo boats to keep me fueled throughout the week.

Also, can I just say the only thing I’ve been craving this week is avocados!! Like, all of them. I don’t know why… Send help, please!

Instructions

  1. For the filing combine all the ingredients (except the avocados) and mix.
  2. Fill the avocado halves with a large scoop of filling (I use an ice-cream scoop for this). Top with more green onion and fresh thyme leaves if you want.
