Quick and easy paleo pizza with delicious Mediterranean toppings! Healthy low carb garlic herb crust topped with chicken breast, dairy free basil pesto, kalamata olives, mushrooms, and red onion. Mmmmm:) 100% gluten free and lip smacking good!
P.S. This pizza only takes 30 minutes in total to make- including cooking time! And the crust has no yeast and no almonds.
Today I woke up and wanted pizza. So, I made the crust. Then I realized that I hadn’t even thought about what I was going to put ON the crust. The cravings just come, ya know. I get all one-track-minded and forget all else!
Anyway, I dug around in the fridge and pulled out some cooked chicken. And then remembered I had some amazing dairy free pesto leftover! Pulled that out of the back of the fridge. And from there, I was pleasantly surprised at how well it all came together. Win!
So, yes… this pizza was a bit of a fling; the result of my instant impulse to cook my craving away. AND it worked!!!!

Thin crusted pizza is where it’s at! Just sayin. I mean, I love a good bready pizza too… or maybe I just LOVE pizza… or maybe it’s the fact that I only eat pizza a couple times a year, because I don’t eat grains. Well, in any case, pizza is bomb! And today I have made a pizza with all my favorite things!!! Funny it turned out that way; mad fridge scramble turned gourmet pizza. Happens all the time. NOT. 🙂
The first time I ate pizza in the last eight months was at MOD Pizza. And it was the first time eating gluten free grains in four years!!! I was super sketched out at first, not knowing if my body would handle it- after being intolerant for many years.
So, after I gave it a go nothing happened. An hour later… nothing different. Huge relief! And major celebration!!! You better believe I ate that whole darn pizza that night. It took all night. And it was single serving. So I can’t really complain that much:)
But all that to say, pizza- I’m a fan. And I hope you love making this recipe. It literally took me no more than a few minutes (about 10) to whip up. So no worries about slaving over a hot stove all day. Most of your time will be spent eating it 😉
Thin Crust Chicken Pesto Paleo Pizza
Ingredients
- 1/2 cup arrowroot flour
- 1/2 cup coconut flour
- 2 eggs
- 1/4 cup olive oil
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1 tablespoon dried oregano
- 1/2 teaspoon garlic granules
- 1/4 teaspoon fresh cracked pepper
- 1/3 cup basil olive oil pesto
- 1/2 cup cooked chicken breast cubes
- 1/3 cup kalamata olives Cut in halves.
- 3-4 whole white mushrooms Sliced.
- 1/4 cup red onion Sliced.
- 1 tablespoon olive oil
- 1 tablespoon olive oil For drizzling on top.
- basil olive oil pesto For sprinkling on top after cooked- If desired.
Instructions
- Preheat oven to 400F.
- In a medium mixing bowl or KitchenAid, combine all the ingredients for the crust.
- Roll the crust out on a pieces of parchment paper. Then transfer the pizza on the parchment paper onto a pizza or baking dish.
- Brush the olive oil over the pizza crust, followed by the pesto.
- Layer on the chopped mushrooms, onions, olives, and chicken breast.
- Bake on 400F for about 20 minutes.
- Once the pizza has cooked you can opt to drizzle on more olive oil and pesto if you want.
