I mean, I’m a big fan of mint chocolate chip ice-cream…
I’m the kid who used to strictly eat mint chocolate chip or vanilla- that’s basically it.
I hated chocolate ice-cream.
I hated bubblegum.
Yeah… but I really loved minty ice-cream packed out with all the chocolates. 🙂
And this one made with all the avocados has won my heart.

All I do is pop it into a metal bowl and let it chill out in the freezer for a bit until it’s nice and thick and creamy- cone licking worthy.

Mint Chocolate Chip Ice-Cream
Ingredients
- 4 small/medium avocados or 2 large avocados
- 1/2 cup maple syrup
- 1 can full fat canned coconut milk
- 1/2 teaspoon mint extract to taste
- 1/2 cup mini chocolate chips
Instructions
- In a blender combine all ingredients (except chocolate chips) until smooth. Then stir in chocolate chips.
- Pour ice-cream into a metal bowl and chill in freezer overnight or until it reaches ice-cream consistency.
