Chocolate cupcakes are LIFE. Also, paleo chocolate cupcakes are even better. That mountain of fudgey frosting on top of that super moist, fluffy, best ever black out chocolate cupcakes… um, helloooo dessert!
I took some inspiration from one of my most popular paleo brownie recipes and evolved those babies into some double chocolate cupcakes worthy of sprinkles. Did you know you can get all natural sprinkles? Now, they aren’t paleo, but if you are looking for a healthier festive way to spice up your cupcake life, these are the natural sprinkles I always have in stock in my cupboards (also, here are the chocolate ones!!!).
Getting every last drop of cake batter and gooey fudgey frosting is ESSENTIAL, so I pulled out my favorite spatulas for the job- Di Oro’s black silicone spatulas. Paleo Diet + Chocolate Cupcakes
Chocolate cupcakes were one of the very first things I made once I turned onto the paleo diet. Never once have they let me down. Always rich. Always decadent and addicting. And always, always my favorite dessert ever.
My sister and I used to have midnight baking and movie marathons, loading our kitchen counters with way too many batches of mini chocolate and vanilla paleo cupcakes… and then of course there was the problematic situation of two teenage girls mixed with chocolate frosting overload, 90’s tv shows, flannel pj’s and bare feet. Partaaaay all night long!
So, if your chocolate dreams haven’t come true since going paleo- that’s ALL about to change. Be prepared to indulge in so much chocolate heaven you won’t know what to do with yourself! Paleo Coconut Flour Chocolate Cupcakes
Ingredients
- 1/2 cup coconut flour
- 1/2 cup cocoa powder
- 1 cup coconut sugar
- 1/3 cup coconut oil melted
- 1/4 cup coconut milk
- 6 large eggs
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 1/2 cup chocolate chips or paleo chocolate
- 2/3 cup cashew butter or almond or peanut
- 1/4 cup coconut oil
- 2 teaspoons vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Preheat oven to 350F. Line a 12 cup muffin pan with paper liners.
- In a stand mixer or by hand combine all ingredients for cupcakes and mix until the batter is smooth.
- Use an ice-cream scoop to fill the muffin liners 2/3 way full. Bake on 350F for 25 minutes until cooked- test by inserting a clean toothpick or knife into the center of a cupcake, if it comes out clean they are done. Allow cupcakes to cool before frosting.
- Prepare a double boiler and bring heat to a low simmer. Melt all ingredients for the frosting together in the double boiler. Then beat with an electric mixer for about 1 minute (I use my KitchenAid). Transfer the bowl of frosting (it will be like a thick liquid) to the fridge to chill for about 1 hour until it thickens (stirring on occasion). Whip frosting again before piping onto cupcakes.
