Today I am going to demonstrate how to make plantain chips (yay!). I couldn’t be more excited. And for such a little thing, oh my. Ever had plantain chips? If not, it’s a must! I am so attached to these delicious chips. The earthly sweetness from the plantain mingling with a bit of sea salt… first of all it’s amazing. Second, it’s a healthy snack and it’s paleo.
Plantains can be cooked at different stages of ripeness. The greener the plantain, the less sugar content. And the more ripe (yellow) the plantain, the sweeter it will be. Either way, they both taste amazing! For this recipe, the plantains can be either ripe or green. Taste preference is the only difference.

Okay, so plantains are a huge hit in this house! I mean huge! Don’t leave a bag of plantain chips around… they will disappear:) Because of this, I may have been known to hide a bag or two under my bed from time to time. Desperate times call for desperate measures.
How To Make Paleo Plantain Chips
Ingredients
- 1 tablespoon coconut oil
- 1 whole plantain ripe and soft
- sea salt flakes to taste
Instructions
- Slice plantain into thin or 1" rounds- depending on if you want thin crispy chips or thick, crisp on the outside and soft like french fries in the middle chips.
- Melt coconut oil in a cast iron skillet over medium heat on stove. Set plantain rounds into the heated oil and cook until golden on each side. Sprinkle with sea salt flakes to taste and serve.
