I have been busy working on so many different projects with my business this week, I feel like my mind is being pulled in every direction. I love being busy and productive, but sometimes I wish there would be an end to the madness. My lists only seem to be growing. Thankfully, I have been able to grab one of these healthy cake bars in-between hours working on web site development, editing, and writing up papers. Working from home, I realize that there is never an escape unless I make one, so I have been trying to balance my time better, but boy is it waaaaay easier said than done. When I go to bed there are tasks begging for attention and when I wake there are a million things to dive into. My mind is always in high gear creating, planning, and learning… and I love it! I feel so blessed to do something I am so passionate about every day I wake.
Snack Cake Ingredients
This snack cake is sooo moist, it practically melts in your mouth! I used coconut palm sugar for this recipe. You can learn more about coconut palm sugar here. I usually bake with maple syrup, but I decided to give this recipe a go with coconut sugar and I am LOVING how it turned out! I feeling that there will be many more coconut sugar baking addictions coming to this blog.
Paleo Cake Bites
Ingredients
- 1 cup almond flour
- 1/4 cup coconut oil solid
- 1/4 cup coconut sugar
- 1 whole egg
- 2 tablespoons almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/3 teaspoon sea salt
- 1/4 cup chocolate chips dairy free
- 1 teaspoon coconut oil
Instructions
- Preheat the oven to 350 degrees and line a 4 inch by 4 inch baking pan with parchment paper.
- Combine all of the ingredients for the bars either by hand or with a food processor or blender. Blend until the batter is completely smooth.
- Pour the batter into the baking pan and cook on 350 degrees for 30 minutes.
- To make the chocolate drizzle, melt the chocolate chips and coconut oil together in a double boiler until the chocolate has melted. Stir the chocolate sauce until the coconut oil is well combined.
- Once the cake has cooled, cut into small squares and drizzle with chocolate sauce.
