5 Min Flourless Blender Berry Muffins
Quick and easy flourless blender muffins stuffed with mixed berries. These gluten free muffins are dairy free and oil free as well! This recipe is so easy to make, because everything goes in the blender and is ready in five minutes.

  1. Preheat oven to 400F. Line 12 muffin tins (2 trays) with paper muffin liners.
  2. Combine all of the ingredients for the muffins (except the berries) in a blender.
  3. Once the batter is smooth stir in the berries by hand. You can also choose to under blend the batter, so the chopped oats give the muffins a nice and hearty coarse texture… I love it that way!
  4. Use an ice-cream scoop to fill the muffin tins with batter 1/4″ to the top.
  5. Bake muffins on 400F for 25 minutes until golden brown.
