Breakfast meatballs. Is that a thing? If not, I just made it a thing today. And no regrets, because these were DELICIOUS! Packed full of fresh rosemary, sage, and thyme- you’re gonna love them (or at least, I hope you do… 🙂 ).

Savory breakfasts: sage “sausage” meatballs!

I am like, waaaay into savory breakfasts! The way I see things, it’s like, save best for last; more like eat the best for breakfast, then do that again for lunch, and on repeat for dinner!

Savory breakfasts are my jam. Whether that’s from years of my Mom instilling this into my head as a kid- swapping out of bowls of cereal for bowls of soup. Or just the fact that I love, love kale, avocados, and greens, and two meals a day with them just isn’t enough!

Anyway,… Things kinda spiraled and got out of control as you can see… savory breakfast meatballs with cream sauce (oh it’s good!). And if you are a little shy about trying savory for breakfast, this recipe can be served over a bed of sautéed kale and cauliflower rice for lunch or dinner!

This recipe was inspired by my turkey sausage patties. They are easy, quick, convenient and a great source of protein! Especially, since I’m not too into the whole red meat thing (wish I liked it better!) Turkey is a great protein to have on rotation in my house. And I looove it! I love it!

I like to prep this recipe (minus the sauce) and store them in glass lock containers in the fridge, for easy meal prep throughout the week! Trust me, these savory meatballs are a life saver when you need dinner on demand! And they make a mean turkey meatball sandwich!

Instructions
  1. Preheat oven to 375F. Line a baking tray with parchment paper and drizzle it with avocado oil (about 1-2 tablespoons).
  2. In a bowl combine all ingredients for the meatballs (except the oil).
  3. Form 1 1/2" round meatballs by scooping some mixture into your hand and rolling until round. Place the meatballs on the baking tray with parchment paper and roll lightly in avocado oil (that is already on the tray). Bake on 375F for 20 minutes until golden.
  4. In a pan saute onions and garlic for the sauce in 2 tablespoons oil (avocado or olive). Once the onions and garlic are golden brown add in the rest of the ingredients for the sauce and heat until simmering. Then take off the heat and pour over meatballs.
  5. To make this a complete meal I love sautéing 4 cups cauliflower rice with 4 cups kale and serving the meatballs alongside (or over) the veggies.

    I made these tonight and they were delicious! My husband isn’t paleo or GF and he loved them too which is always a plus! I added some tapioca starch to the sauce to thicken it a bit (we like a thicker sauce). So flavorful, the meatballs are great on their own!

    We made this recipe a couple nights ago and it was a huge hit! We served it over brown rice fettuccini, but I’m hoping to try it over sautéed zucchini noodles in the future.       We just made this tonight and I used dried powdered sage. 1 Tablespoon was enough bc dried herbs are strong. I also used red onion instead of white or yellow, and because we have a large family we also added 1 pound of organic chicken sausage in the sauce while it boiled. For those of you looking for an alternate to almond flour you can also use cassava. We served it over roasted spaghetti squash. Yum!!!

    I made this last night and it was DELICIOUS!!! I’m loving coconut milk for many things on my whole 30, but I was a little wary about it as a cream sauce. But with all of the added flavor, it was so savory and delicious. I did use ground turkey AND ground pork for a little kick. I’ve come back today to peruse your other recipes.     I made this recipe tonight for the first time and it was delicious! My entire family loved it. I have just one question about the meatballs: do you brown them before putting them in the oven? I didn’t brown them first and my meatballs weren’t cooked through at the 20 minute mark. I ended up leaving them in the oven for 45 minutes and I still would have liked them a bit more well done.     This was one of the most delicious dinners I’ve put on the table in a long time! The kids loved it as well as the husband! I ate it for breakfast lunch and dinner till it was gone! I made exactly as written except I used dried herbs instead of fresh and tapioca flour instead of almond. I paired it with spaghetti squash which soaked up the sauce perfectly! Winner!

    For anyone with a nut allergy, I used regular GF flour in place of the almond flour and it worked out great! I also used dried herbs instead of fresh because it’s what I had on hand but this recipe was a hit and I plan on making it again tonight!     Hi Kaylie, I just made the mix for the meatballs and they are not rolling like a “meat ball”. I’m wondering if I did something wrong but I filled the direction the turkey is sticking to my hands.

      Hi Sarah, it will be kind of sticky, I use an ice-cream scoop that makes for a clean and easy scooping process, but if you don’t have access to one, you can just add more flour or flour you hands. 🙂

    Absolutely delicious!! I’ve made the meatballs four times now, and it’s so good and easy. I’ll be trying it with the sauce soon, just need to get the coconut milk. I’ve subbed out the almond flour for plain bread crumbs and that’s worked very well for those with no sensitivities. My Mom is GF so we’re looking forward to making it for her with the almond flr. Also we haven’t had fresh sage but we’ve used 1 tsp ground sage and usually throw in some garlic powder and extra minced garlic as we are big garlic fans, and we’re so happy with it.     Tonight I made this dish for the very first time. I’m honing my cooking skills and exploring recipes that are delicious and healthy. While making this dish, I already had rosemary and thyme in my pantry, although the recipe called for Fresh rosemary and thyme. I used what I had and it turned out amazing!     Wondering what would be flavorful sub for the sundried tomatoes, unfortunately my little has a tomato allergy. Any thoughts, hoping it won’t be to bland omitted.

      You could use roasted red peppers to add flavor and a similar texture of the sundried tomatoes. Adding a little extra olive or avocado oil salt and pepper will bring it all together. I hope this helps!

    Made these last night and the flavors were delicious but the sauce was super thin. I tried adding some cornstarch to thicken it up but it was just really runny and not like a sauce. The meatballs were a hit though even though I burned the bottoms.

      Glad the meatballs were a success! For the sauce make sure to use the full-fat canned coconut milk. This will help with creaminess and thickness in the sauce. When adding in cornstarch make sure to whisk into the sauce thoroughly and giving it a few minutes to boil. I hope this helps!

    Saving this to try soon as it sounds amazing & I LOVE sage. But, I gotta ask… who eats just ONE Meatball (unless it’s gigantic)? Thats not realistic unless it’s an appetizer portion (even then, who eats just one? lol). This is a general question, yet what makes folks posting recipes shy away from including nutrient info for a normal portion? It can be deceptive for people who don’t pay attention & have no idea how to decipher nutritional info. Just a thought…
