I know, I just made a batch of fudgey paleo applesauce brownies. But what’s a girl supposed to do? When in the mood for some chocolatey baking, nothing stands in my way.

That smooth peanut butter frosting was my big motivation for making these brownies… I’m sure you can see why. 🙂 Also, to make these brownies 100% paleo, just switch the peanut butter out for almond butter!

It seems that the last chocolately treat was eaten from the freezer today, so it’s time to restock! My family loves to dig into the freezer after lunch and pull out a treat; brownies and paleo chocolate muffins are always hot commodities.

With that being said, you can easily freeze these babies and pull them out in your time of need. Nobody ever said no to brownies covered in peanut butter frosting.

This paleo brownie recipe is made with a little extra power boost! ready for the secret ingredient that makes these brownies practically dinner? I used collagen fuel from Primal Kitchen!

It’s loaded with 20g protein for just two scoops and is a paleo friendly protein powder. We use this collagen fuel in our house daily for smoothies and baked goods! It’s soooo good!

Since I’m a sucker for easy recipes, I whipped this one up in my food processor and had it ready in minutes (I’m sure you won’t disapprove of that). The only thing that requires a little extra care is melting the coconut oil before combining everything!

You can also mix everything by hand, but I just like to use my second set of hands (food processor). If you do make it by hand make sure you whip it really good, so there aren’t any coconut flour clumps.

When I served these up to my taste testers for the day; including a handful of friends and family, my brother reached for one, then hesitated and asked me if there was any “weird stuff’ in them… no avocado, sweet potato, zucchini, or black beans???

You better believe he covered all his bases! Hahaha, guess I have a reputation. But I promise these don’t taste like veggies (mostly because they don’t have any!). Also, they don’t taste like beef. The collagen fuel is chocolate or vanilla flavored. I used chocolate flavored collagen fuel since; well, brownies. But vanilla will work too!

So if you’re lookin for an afternoon pick-me-up, late night snack attack, or after dinner dessert, I got ya covered! These brownies are moist, cakey, and topped with smooth and creamy peanut butter goodness, also… they are technically healthy!

Ingredients

Instructions
  1. Preheat oven to 350F. Cut out a 7" square of parchment paper and lay it in the bottom of a 7" square cake pan. Then grease the sides of the cake pan with coconut oil.
  2. Combine all the ingredients for the brownies in a medium size mixing bowl and blend until completely smooth!
  3. Pour the batter into the cake pan and cook on 350F for 25-30 minutes; until a knife when inserted comes out clean.
  4. In a food processor blend all the ingredients for the frosting until smooth.
  5. Once the brownies are cooked, spread the peanut butter (or almond butter) frosting over them. Then cut and serve (or freeze).

    I’m new to Paleo and I don’t mean to sound rude. But how can these be “healthy” with 440 calories and all those carbs for just one? It looks amazing and I’d like a dozen, but it seems to defeat the intent of the Paleo diet even if it adheres to the rules as far as ingredients listed individually. Am I being too stringent?

      Hi Sue, Paleo isn’t about counting calories- it’s about fueling your body with healthy whole foods and healthy fats to nourish your brain! The calories in this recipe are from coconut products and are burned as fat, fuel for your brain! Don’t count calories, count nutrition! 🙂 Hope that helps.

      Coconut flour is much more “healthy” than a white, refined flour as well as coconut oil is much better than butter. I would eat this any day compared to a traditional brownie recipe.

    Will this keep for traveling or does this need to be refrigerated? We are planning a camping trip and I always make fresh brownies for out camping trips and haven’t quite found one that doesn’t dry and fall apart. Thank you.

    What are your thoughts on using coconut manna in place of PB or almond for the frosting?
    Also, do you think they’d hold up well without the protein powder? Maybe sub flax for structure?

    That’s a LOT of sugar for one brownie — 32 grams!!! According to the AHA, the recommended daily allowance of added sugar for a woman is 25 grams for the whole day and Paleo is supposed to be a low sugar/carb diet. When it comes to sugar these are definitely NOT healthy. What gives?

    These look great! Have you ever tried using maple syrup or honey? Would either of those work? What other modifications would be needed to use a liquid sweetener?

      Hi Sara, I am not sure what the measurements would be- I’m thinking it would be too runny, but maybe it would work! Let me know if you try it. I would sub 1:1 ratio.

    Is Palm Oil shortening the same consistency as crisco? I know Crisco isn’t healthy and probably not paleo but I already have some on hand.

    I made these yesterday and they were so delicious! I made the frosting with almond butter, maple syrup and ghee. My ghee was room temp, so the texture of the frosting was thin, but I spread it over the cooled pan of brownies and put the pan in the fridge to set. It worked perfectly. Thanks for the great recipe, I just love your site!
