Just look at all that chocolate. Well, hello there. And YUM! Holy moly, I just can’t stay away from baking brownies. My feed lately has been crowded with brownie recipes! Legit. But, I don’t yet have a recipe loaded with loads and loads of chocolate and nuts yet. So, I felt like it was a plenty good enough excuse to pop into the kitchen for a quick (and chocolaty) bake! Consensus is: I’m more than glad I did.

Just a simple warning from one friend to another: these brownies will be devoured quickly! So, if you are planning on stashing away any for yourself, I suggest making an extra batch; ya know, just for the cook. πŸ˜‰

The goods are made with cocoa, plus an extra dose of my personal fave, black cocoa. Black cocoa (or dutch processed cocoa) is cocoa powder that has had its acids stripped in processing. But what I really love it for is it’s nice and extra rich tone and ascetic. Yes, it’s really black!! I source mine from here.

As if two doses of chocolate weren’t enough, I loaded up the insides with chocolate chips and topped them off with generous drizzles of melted chocolate. Mmmmm…

I guess I should have called them quadruple chocolate brownies!!!

Today, I spent the day making more than just one chocolatey baked treat. Let’s just say, you will have a lot more paleo chocolate recipes in your future! Including, super fudgey banana zucchini bread (and yes, it’s paleo, of course! Yum!), and some more goods that I won’t give away just yet.

But, I will say, that if you hop on over to Instagram I bet you will snag a sneak peak on all that’s going down in the kitchen this week! It’s gonna be good.

Ingredients
Instructions
  1. Preheat oven to 350F. Line a 7" by 7" square brownie pan with parchment paper.
  2. In a food processor (or by hand) combine the ingredients for the brownies (except the chopped pecan pieces and chocolate chips). Blend the batter until completely smooth.
  3. Then stir in the chocolate chips and pecan pieces by hand. Pour the batter into the 7" brownie pan and smooth out.
  4. Bake on 350F for 30-35 minutes until a knife when inserted comes out clean.
  5. Optional toppings are 1/4 cup chocolate chips melted with 1-2 tablespoons coconut oil (drizzle) and toasted nuts.

      Yes, it will work with an 8″ by 8″ pan; the cooking time will need to be adjusted a few minutes less though. I am not sure exactly how long it will take to cook, so keep an eye on them and you will know they are done cooking when a knife when inserted comes out clean.

    These look amazing!!! I am diabetic and would need to swap out the honey for Lankato (monk sugar/erythritol combo). It looks and measures like real sugar. Any idea how much to use and if I would need a little gooeyness from somewhere else in the absence of honey? Thank you so much!

    How could I make these lower in fat. 30 g seems very high as I am diabetic, eating lowfodmap for gastroparesis. Could I subs. The c chips ,pecans to 1 quarter cup and reduce oIL by half. And I was wondering if I could use almond flour since allergic to coconut. Or use my gf flour.

    Hi! I know, the whole point of this recipe is that it is a brownie-recipe – but I’m out of cocoa powder. Would this work if I just make them without the powder, and make chocolate-chip blondies instead? Thanks! The recipe sound really great, and I love your site!

    Hi! Thank you for putting this recipe together. I made these brownies last night with coconut flour I made. The taste is delicious except they were super greasy. I think next time I’ll halve the coconut oil amount and I think they’ll be perfect.

    These brownies are VERY oily. I would recommended cutting the coconut oil in half. I also added almost double the amount of cocoa powder, though that’s my personal preference. 6/10

    Just baked these yesterday. Because I keep my carbs low and I like treats not to sweet, I cut the honey in half but they were fudgey- Still delicious of course. Should I stay the course with the honey to assure true fudge awesomeness? Many thanks for these great recipes

    I used xylitol instead of honey and hazlenuts instead of pecans. I would not recommend doing this. It made them very dry and just horrific. They made me want to quit my keto diet.

    I assume the coconut oil can be in Crisco-like consistency?
    Can I use chopped walnuts?
    The only sea salt I have is coarse. Should I use table salt?
    And a REAL newbie question — I hope the 8×8 can be the dimension of the bottom of the pan? πŸ™‚

      Hi Jay, yes- the coconut oil can be that way and you can use chopped walnuts. You can use coarse sea salt- unless it’s crystals. And yes- that is the size of the pan. πŸ™‚ Enjoy! I’m glad you are venturing out and trying baking! Best of luck!

      Hi Janine, you can add or subtract the amount of servings you would like to make for this recipe and the ingredients will adjust automatically. To do this, just change the number of servings you would like, at the left hand side of the recipe box where it says “servings”… you can enter/type in the amount you would like and it will calculate the ingredients needed. πŸ™‚ Hope that helps!

    Being a UK cook, I’m afraid I have very little success baking using cup measurements.. I much prefer to weigh ingredients. Would it be possible to write your recipes with the ingredients in lbs and ozs or in metric grams? I use both, and it would make life so much easier for us UK cooks. Many thanks.
